Food Pairing?

A violation of all principles of food pairing.

Went to the farmers market. Yellow squash looked pretty and rainbow trout smelled fresh.

So it was rainbow trout on squash.

ROTFL!!! Only you could make a whole fish on a plate look adorable! Or make yellow squash look like Gumby!

I don't know what it tastes like, but it's a great visual pairing. :)

And I'll bet it tastes every bit as good as it looks!

I'm curious, though, about the sauce on the trout.
What is it?

Thanks everyone.

When it comes to food plating, I am always against carving food. You know, making carrots to look like butterflies, or an apple into a swan; but I got a little silly this time. :-)

Rusty, the sauce is chantterelle mushroom sauce. I only had a few left, so I blended them into a sauce.
