Meatloaf

I'm sure this is a no brainer for most, but something that has perplexed me since the cave days.

How do you make a meatloaf that doesn't have a crust on top?

Neither my husband or myself care for the crust, altho our dog thinks she's in heaven. I've tried covering the baking dish with a lid, tried completely uncovered and tried partially covered with a vent hole (foil), and tried uncovered the first part of baking and covered the rest. I always get a crust. I've tried wrapping in bacon but end up with a hard bacon crust. I've tried slathering mashed potatoes on top half way thru the cooking process and that doesn't seem to work for me either.

Altho I make it for dinner, it's the sandwiches the next day or so that we prefer, but have always thought that it's a waste of meat to be cutting the crust off.

Is my dog destined to be forever happy when I make a meatloaf?
