Comments (24)The OP recipe makes what we call hush puppies here in the Deep South, LOL - except we don't flatten 'em before we fry them, and we usually blend a small, chopped onion with the egg in a blender before adding to the batter, which makes them very moist and delicious. When we eat beans, rice, and greens (a favorite meal here), I bake cornbread in an iron skillet. Won't make it unless I have buttermilk and bacon drippings (instead of oil). Comments (14)My SIL from Tennessee informed me before I married Elery that cornbread did NOT have sugar and was made from white cornmeal. Anything else was not cornbread, it was cake. (grin) I like it all, pretty much, depending on what I'm eating it with. If I have a pot of beans, I want cornbread that isn't sweet. If I'm having muffins for breakfast I want it sweeter, and with yellow cornmeal. CindyMac's cheese and jalapeno version goes with chili, and sometimes I add bacon. As I said, it's all good. Taste is not objective, it's subjective, so it just all depends on what you like. Now I've found that Amanda is celiac, I tend to make cornbread without additional flour, and Elery likes cornbread batter baked like pancakes and sometimes I add cheese and chopped ham to those for breakfast. If it's just me and Elery, I like this recipe from King Arthur Flour. I always use a cast iron pan to bake the cornbread, it gives a nice crust. Skillet Cornbread 1/4 cup bacon drippings 1 1/2 cups coarse stone-ground cornmeal 1/2 cup flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 large egg 1 1/2 cups buttermilk, well shaken Directions Put the bacon drippings in a 9" cast iron skillet and place in the oven as it preheats to 450°F. Whisk together the cornmeal, flour, baking powder, baking soda, and salt in a medium bowl. In a small bowl, whisk together the egg and buttermilk. Make a well in the center of the cornmeal mixture and pour in the egg mixture. Stir only until blended. Remove the skillet from the oven and pour in the batter. It will sizzle and pop, so be careful. Bake until the cornbread is firm in the middle and golden brown on top, about 25 minutes. Comments (46)I prefer a mix of breads, sourdough, wheat, rye, French/Italian, etc. Not into cornbread in there but I'll eat a little of it if nothing else is appealing. I know there's some who insist that cornbread must not be sweetened and to me that's about as arrogant as to insist that tea must be sweetened. I prefer both unsweetened but to each their own. Reminds me of some Youtube videos I've seen where people are saying "you don't want it to be ____..." or "you don't want large chunks (or small chunks or whatever)..." and I just think how the h#$% do YOU know what *I* want or like? Comments (125)Nancy, I don't think I have tried that salad dressing before. I'll have to make it some day. :) What kind of vinegar should I use? Apple cider, white, or it doesn't matter? Kim, that recipe is so simple! Haha, will have to try it when my garden starts producing tomatoes. DH loves raw tomatoes. (He hates it when I cook sliced tomatoes in my stir-fries.) Also, has anyone watched Ugly Delicious on Netflix? I thought it is pretty fun to see how the different food cultures create the same dish in each episode.
