Cuban 24 Hour Pork Roast 1/2 cup fresh orange or tangerine juice 1/4 cup kosher salt 2 tablespoons packed brown sugar 1 tablespoon dried rosemary 1 1/2 teaspoons smoked or sweet paprika 1 1/2 teaspoons whole black peppercorns 1/2 teaspoon dried oregano 3 cloves garlic , coarsely chopped 3 1/2 cups cold water 1 (5- to 6-pound) boneless pork shoulder roast , tied 1/2 cup lemon or orange or tangerine sorbet 2 tablespoons fresh tangerine or lemon juice 2 tablespoons packed brown sugar 1 tablespoon fresh lime juice Orange slices, for garnish (optional) Chopped cilantro , for garnish (optional) 24 Boston lettuce (about 2 heads), for serving Fresh salsas (recipes below), for serving Directions To make brine: In a small saucepan, combine orange juice, salt, brown sugar, rosemary, paprika, peppercorns, oregano and garlic. Bring to a boil; cook, stirring until salt and sugar dissolve, about 30 seconds. Pour into a large bowl and let cool slightly. Stir in water. Refrigerate until cold, about 30 minutes. Place pork roast in a large Ziploc bag. Pour brine over roast and seal bag. Place bag in a large bowl and refrigerate 24 hours, turning bag once. Preheat oven to 300�. Remove pork from brine and transfer to a large roasting pan. Cover loosely with foil. Roast pork 6 hours, or until meat is very tender. Remove pork from pan and set aside 30 minutes. Pour pan juices into a bowl and skim off fat (or refrigerate until fat hardens, then remove fat and discard). Set aside; do not clean pan.

I love to make a pot roast out of pork butt or shoulder - brown the meat in a dutch oven, then add lots of garlic and chopped onions. For liquid use fruit juice or broth or a combo plus any herbs you like - last time I used rosemary and thyme from our garden, yummy. Bake at 325F for about 3 hours, then remove the meat and make gravy from the juices. Leftovers make wonderful pulled pork sandwiches or tamale pie. I also like to use either the ribs or butt to make carnitas, but you already mentioned those. Here's a couple of recipes I've used with country ribs - all were good, and I'd make them again. Bob_b: I have to disagree with some of the others. Having done them both ways for years, I have found that there is no lost flavor, by boiling them. But you can't boil them vigorously, just Simmer them, very slow, just about bubbling. - - - - - - - - - - - - - - LouÂs Broiled Spare Ribs and Finger Licking Good , Sauce I use Country Style or Sizzlers , cut a little thicker than 1/2 inch,I like a little meat with the bones. For about 3 1/2 lb. of meat. Put a pot of water to boil, on the range top, with just enough water To cover the Ribs. Add: 1/3 teaspoon of Old Bay Seasoning , Garlic Powder and Onion Powder. An Italian pinch of Ground Cloves , Basil and Oregano 1/4 Teaspoon of Black Pepper 2 Bay leaves Simmer for about 90 minutes ( very low , not boiling ) Meanwhile, put in a small bowl : 1/2 cup of Bullseye or Krafts Original Barbecue Sauce 1/2 cup of Ketsup 1/2 teaspoon of Mustard 1/4 teaspoon of Old Bay Seasoning 1/3 Teaspoon of Garlic Powder & Onion Powder An Italian pinch of Cloves , Basil and Oregano Black Pepper - to taste. 2 tablespoons of Brown Sugar and Maple or Pancake Syrup 2 Heaping tablespoons of Grape Jelly and Strawberry Jam Smooth out the Jelly and Jam with a fork and mix well. This may sound like overpowering sweetness but it is not and Caramelizes perfectly. - - - - - - - - - - - - I use a 9x 13 SS pan and lay some Sauce on the bottom. Then I lay in the simmered Ribs and spoon the Sauce on them. If there is some sauce left over , save it for basting when the ribs are almost done. I cook them in an electric range Broiler, set on Low, Placed on a shelf about 8 inches below the burner. They will cook in about 25 minutes. Test after 20 minutes Ummmmmmmeemm Gooooooooood !!!!!!!! Lou PS: There are many who will dissagree with this method but have never tried it. And some say they don't like the sweet sauce but have never tried that either. I've gotten great feedbacks.

I did like them the 2nd day, too, especially because after being in the refer, the fat hardens and it's easy to remove most of it. I wonder if the oven browning might be better on a broiler pan, so the fat drips away. I might try that next time. My friends I cooked this for now want me to make it for a huge party they're having this summer. I think I'll try one batch on a broiler pan before then and see how they do. I'd probably put them back in a regular pan when adding the veggies.
