Fruit flavored ice cream

I know there have been several ice cream questions recently... but I have yet another one!!!

When you make a fruit flavored ice cream, how much sugar do you add to the milk mixture? I'm fairly new at homemade ice cream (as far as experimenting with new flavors!)..... the basic vanilla and chocolate turn out great....

but last year I attempted (on two different occasions) to make pineapple ice cream (a huge favorite of my extended family). I used fresh pineapple and the ice cream had a very bitter taste (TWICE!!). Is it just a matter of adding a ton more sugar?? or is the fresh pineapple somehow changing once it freezes? My aunt has made pineapple icecream for years (and uses canned pineapple) and it is delicious.

Also.... I have some fresh mango and was thinking about trying some mango icecream (oooh... it sounds heavenly!!).. .but I don't want to ruin an entire freezer of ice cream again!

Any helpful hints will be appreciated!
