Lunch Today - Part I

Classic Bruschetta -- Farmer's market tomatoes and garden basil or perfectly grilled bread. DH and I think this is a pretty close second to a BLT!

I much prefer bruschetta to BLT, especially if the bread is grilled. Did you brush the bread with olive oil before grilling? I usually use a mixture of butter, olive oil, and garlic.

I finally have a tomato plant that is growing well ( as well as a few basil plants), and so I should be able to make this with home-grown ingredients in another month or two. I get tomatoes late in the season, but I get a long season. We have a cherry tomato plant growing in the ground, and it is doing a lot better than the tomatoes I have started from seed in pots. One seedling is doing fairly well, but I am afraid to transplant it yet. The cherry tomatoes do very well in my soil here, and the last plant I had growing next to the grape vine lived for over a year and produced lots of tomatoes throughout January, although they were fairly small.

I should check the Farmers' Market in Playa Vista tomorrow for tomatoes!

Bruschetta indeed is great for a summer lunch.

Oh goodness, I can see I was not clear... my friend treated me to lunch at a local eatery--that's why (in my initial post) I was surprised when I was approached and told "no photos!" Sorry for my miscommunication. It was all delicious, and really, a lot more from which we could choose, but this is what we enjoyed. I love the green tea ice cream, and only get it once or twice a year, so that was especially enjoyed! This week is my second week of "early Spring break" from teaching, and that's always special to me--it was even more wonderful to be surprised and treated to lunch! Watch out for spam!! Smiles, Sooz

Glenda, I'm 74 and I woud find it amusing if I overheard a conversation like that. We all know people that are 'old' at 60! They walk like an old person, they talk like an old person and they think like an old person. Age is a state of mind. Exercising and keeping active keeps you young. I'm still walking five miles a day or eighteen holes of golf and I know people a lot younger than me that cannot do that. You're doing water aerobics, weights, etc. You go girl. Just laugh it off. Don't you remember when you were a teenager and thinking that 35 was old?

I don't like cucumbers when they've been cut more than a couple of hours unless they're preserved in a salad with a plentiful acidic dressing. What you can do is prepare everything else, like the lemon zest, chopped nuts, apricots (roll in a little fine flour or sugar to keep the chunks separate), etc. You can even cut the strawberries and cherries, especially if you can put them cut side down on plastic wrap on a tray. You can make up the cream cheese filling, as well. If it won't separate, you can even load it up into your pastry bags, and wrap them tightly (no air) in plastic. Wrapping each separately and waiting to assemble will also keep your individual flavors bright and fresh. If you have your mise en place pretty much done, assembling them tomorrow shouldn't take very long.

Like dcarch, I love the platter your bruschetta is on.

I do like bruschetta, nearly as much as I like BLTs. I have basil growing in the herb garden and small green tomatoes on my plants so maybe, like Lars, I can have both in a month or so.

If you added lettuce, it could have been called a BLT - basil, lettuce and tomato. lol But I think it's best just the way you have it.
