Mandarin Orange Cake

Hi everyone,

As I type this post, the mandarin orange cake is baking in the oven. It's such an easy recipe! Once it's done baking, it'll be time to make the brown sugar glaze, which is brown sugar, milk, and butter.

It's looks delicious, Brad! When is the reunion? Please give us a report afterwards. Are you also taking your Gram's lemonade? It's so hot/humid I'm betting that lemonade won't last five minutes! Wish I had a slice of that glazed cake for later tonight... :)

dcarch, oh yes, Tortilla Pinwheels/Roll Ups are very sophisticated lol. The garlands are finished and today I bought some items for Rocky Horror themed gift/thank you/prop bags. I bought lip shaped whistles, beaded necklaces, star shaped sunglasses, and neon colored twist shape bracelets. I was going to get feather boas but Hobby Lobby and Michaels didn't have them on sale and were way to expensive to buy for 10 people. I know tomorrow there's supposed to be a bad snowstorm, but then the temps are going to go back up into the 40's, thank goodness. Hi Madonna, I'm so glad that the Mandarin Orange Cake turned out to be a success for you! I really enjoy the icing for it, and it hits the spot every time. I hope the gardening season is successful and we don't have a dry summer like we did last year. It's rained overnight for the past two nights, thankfully. I have a rain chain hanging from the gutter, and they're so much prettier than a downspout. As for my costume, I will be keeping it a surprise. There's more work going into this one than what I did for Cruella, as a friend said she was going to help me. It's another female character, not exactly Disney, but similar. Have a great time Brad. Have a great time at your reunion. And thank you for all your sharing here. I love your posts. I'm also one who was never popular. Our reunion was last summer, 35 years, but I didn't go. It was to be a 3 day event, the only day that I might have thought about going was the night they had the banquet. But at $90 for DH and me to go, I decided we would have more fun putting that $90 into the gas tank of the RV and doing something else. That's half a tank of gas in that thing! And it's amazing to me just how often I see an old class mate in Walmart that always speaks to me like an old friend, that never had anything to do with me in school. They were always polite, but I sure wasn't in their circle! Now it's like I'm a long lost friend. But as I haven't left the area, and they know who I married, I guess if they really wanted to talk to me, they could get in touch with me! Tami

Thank you, everyone! morz8, I knew that they were going to be on there at some point. I sent them out last Wednesday and was hoping they would be shown in last Friday's video, but I had to wait a while. They just showed the cards and letter laying there. I can visualize how good that is. On the 4th we spent the evening with old friends and Betsy had made a mandarian orange cake. It was three layers with a Kool Whip icing that had pineapple and coconut in it . Icing between each layer and on top,, no icing on sides, kept in the refrigerator. It was so cool, so pretty and not terrible sweet. It was perfect for a later dessert with coffee. I had never eaten mandarian orange cake before.
I came home with the recipe it is on my soon to make list.

Tricia, my reunion is a week from today and for that I'm making the lemonade (2 gallons worth) and two types of cobbler-one peach, one blackberry. Of course, a container of whipped topping and a can of Reddi Whip will be in tow also lol.

Shirl36, I got the recipe from online. I don't care much for pineapple or coconut, so I was glad when I found this glaze. I may try it sometime with the icing you mentioned, but with mandarin oranges instead.

I had a little taste of some fallen crumbs. It's very, very moist and it tastes delicious!

I make one with the frosting like Shirl described for one of our desserts for Easter dinner every year.

This cake is just for my parents, myself, and my neighbors. I also made a batch of my gram's lemonade to share with them, too.

Well, it looks like I won't be giving them their pieces of cake until next weekend. Luckily, I read that this kind of cake can be frozen :-). The lemonade, however, looks like we'll have to drink, which is no problem lol.
