Comments (17)I found this recipe while looking for ways to use cucumbers early this season. It is a simple recipe, takes very little time to prepare and it's very tasty. (Provided you like curries.) Spicy Indian Chicken And Mango Curry Recipe INGREDIENTS: 2 medium mangoes, peeled and sliced, divided 1 can (10 ounce size) coconut milk 4 teaspoons vegetable oil 4 teaspoons spicy curry paste 14 ounces skinless, boneless chicken breast halves -- cut into cubes 4 medium shallots, sliced 1 large English cucumber, seeded and sliced PREPARATION: Place half of the mango slices into the bowl of a blender with the coconut milk. Blend until smooth and reserve for later. Heat the oil in a large pot over medium-high heat. Stir in the curry paste, and cook until fragrant, about 1 minute. Add the chicken and shallot; cook until the chicken is done and the shallots have softened, about 5 minutes. Pour in the mango puree, and cook until heated through. Comments (2)Would need to see the recipes your talking about to address any issues of safety. There is a standard recipe for Marinated Cucumbers and Onions in vinegar, sugar and salt & pepper. But it sure can't be stored in the fridge for "months", more like a week, and no the brine doesn't need to 'cover' the sliced vegetables. All the water in the cukes quickly dilutes the vinegar so the pH rises and bacteria becomes an issue. As to 2x the sugar to the amount of vinegar - you can't make a comparison there. It's like comparing apples to onions in terms of their purpose. :) It takes a great deal of sugar to offset the taste of the vinegar so many pickling recipes will call for more sugar. Comments (41)I should have posted this one too. Easy to make with fresh ingredients from your garden. Tomato Cucumber Salad This one's a favorite made by a local restaurant called Dinosaur BBQ. The recipe comes from their cookbook. Feeds 6 Ingredients Salad 1 1/2 lb tomatoes Pinch each of kosher salt and black pepper Pinch of sugar 2 medium cucumbers 1/2 large red onion 30 small fresh basil leaves Dressing 1/2 cup extra virgin olive oil 1/4 cup red wine vinegar Black pepper 1 teaspoon kosher salt 4 garlic cloves, minced 1 teaspoon sugar 1 teaspoon dried oregano Core the tomatoes and cut lengthwise into 6-8 wedges. Cut each wedge in half crosswise. Place the tomatoes in a large bowl and wake them up with a big pinch of salt, pepper and sugar. Cut the ends off the cucumbers and use a vegetable peeler to make long stripes in the skin. Cut the cucumbers in half lengthwise and then crosswise into 1/4 inch slices. Add to the tomatoes. Peel the onion and cut lengthwise into slivers. Dump the onions in with the tomatoes and cucumbers and give everything a good toss. Clean and dry the basil leaves. Stack them on top of one another and roll lengthwise into a tight cigar. Cut crosswise into thin strips and stir into salad. Throw together a batch of dressing. Whisk all ingredients together in a small bowl. Pour over tomatoes and cucumbers. Marinate the salad at room temperature for several hours. Napa Salad Ingredients: 1 large head of Napa cabbage washed and shredded 2 packages of Ramen Noodles crushed and uncooked (discard flavor packet*) 1/2 cup slivered almonds 1/2 cup butter (1 stick) 1/2 tsp sesame oil or roasted peanut oil (optional) 1/2 cup vegetable oil 1/2 cup seasoned rice wine vinegar 1/2 cup sugar 2 Tbsp soy sauce Instructions: In a large pan sautee Ramen Noodles, almonds and butter until lightly browned. Mix oil, vinegar, soy sauce and sugar to make dressing. 20 minutes before serving, mix cabbage dressing and noodle mixture together and toss. *We buy the Chicken flavored Ramen Noodles and add the flavoring packet to our rice on Chinese night.
