Potatoes w/ Garlic Scapes

If anyone is still getting garlic scapes....

I'm new to using garlic scapes....so just ignore this post if you're an experienced 'scaper'. :)

I made some wonderful roasted potatoes this week. Very simple to do.

Peel & cube potatoes in 1/2-3/4'' squares. (I used russets.) Dump into roasting pan. Chop garlic scapes into about 1/4'' slices...be generous with scapes. Drizzle w/ olive oil, a few dabs of butter, salt & pepper.

I roasted mine in the toaster oven. They didn't brown so I finished them off under the broiler.

They were WONDERFUL! Much better than garlic roasted potatoes that I've made with fresh cloves of garlic. Sooo, if you happen to have some scapes left, I encourage you to try them in roasted potatoes.
