Claire, would you kindly share your recipe for the "Crazy Strawberry Cake"

I am not Claire, but I think this is the cake she was talking about.

Strawberry Magic Cake
1 10oz pkg. miniture marshmallows
1 box yellow cake mix prepared as directed on package
1 3oz box strawberry jello
1 16oz. box frozen sliced strawberries, slightly thawed, but do not drain
2/3 cup cold water

Spread marshmallows evenly over the bottom of a greased 10x13 baking pan. Spread prepared cake batter evenly over marshmallows. Sprinkle dry jello powder evenly over the cake batter. Spool slightly thawed strawberries here and there over jello powder and then drizzle evenly with 2/3 cup water, but do not stir. Slip cake carefully onto
center rack of a 350o oven, and bake 55-60 minutes or until top is golden brown. Let cool in pan at least 30 minutes before cutting.
Serve with Cool Whip or whipped cream. Refrigerate leftovers. Freezes well.

Hi Lucyny, me again,

Didn't have this one in front of me when I gave you the other recipe. Anyways this is a similar version that I made a few weeks ago and it was wonderful. Very moist. The differance is the cake is made from scratch and the jello is actually mixed in with the strawberries.

1 c miniature marshmallows
1 pkg (16oz) frozen sweetened sliced strawberries, thawed, (don't drain)
1 3 oz package strawberry jello
1/2 c shortening or butter
1 1/2 c sugar
3 eggs
1 tsp vanilla extract
2 1/4 c flour
3 tsp baking powder
1/2 tsp salt
1 c milk
fresh strawberries and whipped cream for garnish

Sprinkle marshmallows evenly into a greased 13x9x2 in baking dish, set aside. In a bowl, combine strawberries and jello, set aside. In a mixing bowl, cream shortening or butter and add sugar. Add eggs one at a time beating well after each addition. Beat in vanilla. combine flour, baking powder, and salt and add to creamed mixture, alternately with milk. Pour batter over the marshmallows. Spoon strawbery mixture evenly over batter. Bake at 350F for 45-50 min or til a toothpick inserted in center tests clean. Cool on a wire rack. Cut into squares and garnish with strawberries and whipped cream. Serves 12-16.

Note: I served the cake with a mascarpone/ whipped cream sauce, and stored the uneaten cake in the fridge well covered.

This one always turns out good: STRAWBERRY JELL-O POUND CAKE 1 box strawberry cake mix 1 pkg. strawberry Jell-O 3/4 cup vegetable oil 4 eggs 1 pkg. vanilla instant pudding mix Empty cake mix into bowl. Put Jell-O in a measuring cup and fill to 1 cup with boiling water. Add 3/4 cup of liquid to cake mix. Reserve 1/4 cup for glaze. Add remaining ingredients to cake mix. Beat on low speed until mixture is blended then beat on medium speed for 2 minutes. Bake in tube pan for 1 hour at 325 degrees. Glaze: 1/4 cup Jell-O (from above) 1 cup confectionersÃ¢ÂÂ sugar Add the 1/4 cup of Jell-O to 1 cup confectionersÃ¢ÂÂ sugar. Mix well and spoon on warm cake.

Stacy LEMON BUTTERMILK CAKE WITH STRAWBERRIES Âriverrat Serve this dense, moist cake with a big bowl of lightly sweetened strawberries. CAKE 1 3/4 cups sugar 3/4 cup (1 1/2 sticks) unsalted butter, room temperature 2 tablespoons grated lemon peel 3 extra-large eggs 1/4 cup fresh lemon juice 3 cups cake flour 1 teaspoon baking soda 1/4 teaspoon salt 1 1/2 cups buttermilk 1 16-ounce package frozen sliced sweetened strawberries, thawed FROSTING 12 ounces cream cheese, room temperature 1/2 cup (1 stick) unsalted butter, room temperature 2 cups powdered sugar 5 tablespoons frozen lemonade concentrate, thawed 1/2 teaspoon finely grated lemon peel 2 1-pint baskets strawberries, hulled. FOR CAKE: Position rack in center of oven and preheat to 350Â°F. Butter and flour three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Beat sugar, butter and lemon peel in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Beat in lemon juice. Sift flour, baking soda and salt into medium bowl. Beat in lemonade concentrate and lemon peel. Divide strawberry mixture between 2 cake layers and spread over tops, leaving 1/2-inch border around edges. Let stand until slightly set, about 5 minutes. Place 1 strawberry-topped layer on platter. Drop 3/4 cup frosting atop cake by spoonfuls; gently spread over top. Top with remaining strawberry-topped layer. Drop 3/4 cup frosting by spoonfuls atop cake; gently spread over top. Top with remaining cake layer. Using spatula, spread remaining frosting in decorative swirls over sides and top of cake. Well....it will pretty well taste like that artificial strawberries that Kool Aid tastes like. If you don't mind that taste, I would just sprinkle about 1/2 a package of unsweetened Kool aid into the last addition of flour and mix well before you fold it into the cake. I would much prefer a real vanilla and real almond flavored cake.....with fresh berries on top. Linda C

The strawberry/rhubarb combo is a very traditional blend. It's hard to sub for it. I'd be more inclined to try a strawberry/apple or strawberry/ blueberry mixture. Adjust the sugar a little if you think it might be too sweet, you can always add more as the filling is cooking. Strawberry/pineapple might be good too..... Nancy

The recipe I used is exactly as Shelley's except that I "spoon" the strawberries, LOL!

Shelley, thank you for posting the recipes and Claire your photo looks so yummy, saw it on the other post & knew I needed to try this. It will be one of the desserts for tomorrow evening.

Lol,Claire I am a little slow, took me reading it four times to figure out why you "spoon". Too funny..I really should use spellcheck or type slower.

Claire since you had mentioned the ingredients on the other post, I purchased those items (baking is my thing, kinda of figured out the size of Jello & the frozen strawberries) & feeling confident that the recipe would get posted, a great group of people at this site.

So it will be the first recipe Shelley posted that I'll try this time around. Thank you.
