Is there anything you bake with strawberries . . .
Comments (20)I made this last year and it was very good! Originally posted by Suzytwo STRAWBERRY RHUBARB COFFEE CAKE ** FILLING ** 3 cups sliced rhubarb, -- 1 inch pieces 1 quart fresh strawberries, -- diced/mashed 2 tablespoons lemon juice 1 cup sugar 1/3 cup cornstarch ** CAKE ** 3 cups all-purpose flour 1 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda ý teaspoon salt 1 cup butter or margarine, -- cut into pieces 1 ý cups milk (buttermilk is even better) 2 eggs 1 teaspoon vanilla extract ** TOPPING ** ü cup butter or margarine þ cup all-purpose flour þ cup sugar Preheat oven to 350. In a large saucepan, combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat about 5 minutes. Combine sugar and cornstarch, stir into saucepan. Bring to a boil, stirring constantly until thickened; remove from heat and set aside. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. (I used my hands, pressing the butter into the flour. Use cool butter) Beat milk, eggs, and vanilla; stir into crumb mixture. Spread half the batter evenly into a greased 13x9x2-inch baking dish. Carefully spread filling on top. Drop remaining batter by tablespoonfuls over filling. For topping: melt butter in microwave over low heat, stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter. Lay foil on lower rack to catch any juicy fruit spillovers. Place coffee cake on middle rack, bake at 350 for 40-45 minutes. Cool in pan. Cut into squares. Posted 6/10/08 by Susytwo Linda...See MoreGreat Dessert

Comments (8)If you mean a real outside on the beach clam bake...I would go with a "grab and go" dessert like cookies or brownies. If you are having a "less sandy" affair, how about my famous ( or infamous!) apple cake with cake gravy? Apple Cake 4 cups chopped apples 1 ½ cups sugar ( can use ½ splenda) ½ cup raisins ( I use chopped other fruit like dried peaches or apricots or craisins) Mix and let sit for about an hour ( less is OK) 2 cups flour 1 1/2 tsps baking soda ( I like 3/4 tsps soda and 3/4 tsps BP) 3/4 tsps salt 1T cinnamon ¼ tsp nutmeg Mix dry ingredients 2 eggs 3/4 cups veggie oil 1 tsp vanilla beat together 1 cup chopped pecans if desired. Add the oil and eggs to the apples and sugar and dried fruit. Stir in the dry mixture and add nuts if desires. Pour into greased 9 by 13 pan and bake 350 until doneÂ..40 to 50 minutes. Serve with cake gravy! Cake Gravy Mix 1 cup sugar 1 stick butter 1/2 cup evap milk 1 tsp vanillaÂ. Mix all and cook all in a sauce pan for about 3 minutes. Serve warm over the cake....See MoreGreat Dessert - Summer Torte
Comments (28)I saw it over at the CF and had to try it. I made mine with fresh peaches and it was so good. DS asked where it all went because it was gone in less than 2 days! LOL He said next time make it with the new apples that are just coming in. Or maybe I will use small individual tart pans and make them with all kinds of different fruit.
