Summer Torte Again! And the BEST!
Comments (27)The original NTYimes recipe does not include vanilla. 1983. But in 2016 they published 5 Ways to Adapt Our Famous Plum Torte Recipe I wish more recipes did that. Rather than complain that comments are not the true recipe, they published reader comments for variations. Different seasonal fruits, different flours, less sugar, different sugars. Any pan will do and easily doubled for a sheet pan torte. And different liquors. I'd forgotten about the lemon juice. I appreciate the bumping of this. I'd forgotten where my original recipe came from. That was when i started making mine with cornmeal flour for gluten-free. (family member) Similar recipe using flour was one of the first things i learned to make as a wee child. Easy and fun for a young one to decorate with seasonal fruits. Mother always had fresh fruit at the table and whipped cream or ice cream. Making one tomorrow with plums and rhubarb....See MoreIs there anything you bake with strawberries . . .
Comments (20)I made this last year and it was very good! Originally posted by Suzytwo STRAWBERRY RHUBARB COFFEE CAKE ** FILLING ** 3 cups sliced rhubarb, -- 1 inch pieces 1 quart fresh strawberries, -- diced/mashed 2 tablespoons lemon juice 1 cup sugar 1/3 cup cornstarch ** CAKE ** 3 cups all-purpose flour 1 cup sugar 1 teaspoon baking powder 1 teaspoon baking soda ý teaspoon salt 1 cup butter or margarine, -- cut into pieces 1 ý cups milk (buttermilk is even better) 2 eggs 1 teaspoon vanilla extract ** TOPPING ** ü cup butter or margarine þ cup all-purpose flour þ cup sugar Preheat oven to 350. In a large saucepan, combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat about 5 minutes. Combine sugar and cornstarch, stir into saucepan. Bring to a boil, stirring constantly until thickened; remove from heat and set aside. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. (I used my hands, pressing the butter into the flour. Use cool butter) Beat milk, eggs, and vanilla; stir into crumb mixture. Spread half the batter evenly into a greased 13x9x2-inch baking dish. Carefully spread filling on top. Drop remaining batter by tablespoonfuls over filling. For topping: melt butter in microwave over low heat, stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter. Lay foil on lower rack to catch any juicy fruit spillovers. Place coffee cake on middle rack, bake at 350 for 40-45 minutes. Cool in pan. Cut into squares. Posted 6/10/08 by Susytwo Linda...See MoreGreat Dessert

Comments (13)murraysmom - It is called a torte pan. It has a removable bottom so easier to get the dessert out. I got mine at the thrift store for a couple of dollars. I am always on the look out for kitchen stuff there. Torte pan Wish I could send you all a piece. It is really yummy with any kind of fruit. And easy to make....See Morecaflowerluver
