Homemade yogurt questions

So I haven't tried the homemade cream cheese yet but I am working on making yogurt in my crockpot. Got some grass fed Amish milk and used an organic Greek yogurt for my starter. My question is, how do you know it's done? The many many websites I looked at said 6-8 hours. I left yesterday's batch in for the full eight hours and ended up with a good, thick yogurt but with a layer of whey on the top. I'm thinking I should have taken it out earlier? The taste is awesome. It's smooth, creamy and very mild tasting. Mixed it with a bit of homemade jam and it was perfect. Just

wondering about all the whey on the top and also if it would be beneficial to add powdered milk as some sites recommended. Thanks guys!
