A pound of pepper jack...

I was gifted with a pound of pepper jack cheese. I can only make so many omelettes. Other than snacking on it how else can I use this bounty?

Dice it up to add to a black bean and corn salad. I can post a recipe later.

Cube it up, put in a freezer zip bag and freeze it for future uses where it will be melted.

Make quesadillas with grated zucchini. I have a recipe for this also.

Fix a plate of nachos with fresh or pickled jalapenos, diced bell peppers, chopped onion, lots of cheese, and a drizzle of salsa and sour cream after baking.

A friend of mine sent me this recipe, and she makes them. She's never baked them in the microwave. I doubt if I would either because I wouldn't bake just one, but it might be worth a try. It sure would be a handy dough to have on hand. Refrigerator Applesauce Wheat Muffins Favorite Recipes --The Muffin Cookbook Mix up this batter and refrigerate in a tightly covered plastic bowl. If you cook for one, you can scoop out batter for one muffin at a time. Bake in the microwave oven for 30 to 50 seconds, or in conventional oven. 3/4 cup All-purpose Flour 1/2 cup Whole Wheat Flour 1/2 tsp cinnamon 1/4 tsp Salt 1 cup Quick-cooking Rolled Oats 1/2 cup Packed Brown Sugar 1 tsp Baking Powder 1/2 tsp Baking Soda 3/4 cup Buttermilk 1/4 cup Applesauce 1/4 cup Vegetable Oil 1 egg, beaten 1/4 cup Raisins Directions: In large bowl, combine flours, oats, brown sugar, baking powder, baking soda, cinnamon and salt. In small bowl, combine buttermilk, applesauce, oil and egg until blended. Stir into flour mixture just until moistened. Fold in raisins. Cover and refrigerate overnight or up to 10 days. Microwave: Line 6 microwavable muffin-pan cups with double paper liners. Spoon batter into each cup filling 1/2 full. Microwave at HIGH (100%) power, 3 to 3 1/2 minutes or until wooden pick inserted in center comes out clean. Rotate dish 1/2 turn halfway thru cooking. Let stand 5 minutes. Remove from pan. Repeat procedure. For last 3 muffins, line 3 muffin cups with double paper liners. Microwave at HIGH 1 1/2 to 2 minutes. Let stand 5 minutes. Remove from pan. Makes about 15 muffins. Conventional: Preheat oven to 400 F. Grease or paper-line 12 (2 1/2 inch) muffin cups. Spoon batter into cups. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean Makes 12 muffins. Note: Have never cooked in the Microwave

Rosemary and Olive Oil Crackers Adapted from Karen Solomon’s cookbook Jam It, Pickle It, Cure It published by Ten Speed Press 2 cups all-purpose flour, plus more for dusting 1 teaspoon baking powder 1 teaspoon sugar 1 teaspoon kosher salt, plus more for the cracker tops 1/2 teaspoon freshly ground black pepper, plus more for the cracker tops 1 egg 1/3 cup olive oil 1/4 to 1/2 cup cold water 1 teaspoon dried chopped rosemary, plus more for the cracker tops In a large bowl or food processor, mix the 2 cups of flour, baking powder, sugar, 1 teaspoon of salt, and pepper. In another bowl lightly beat the egg and the olive oil. Slowly stir the liquid into the dry ingredients in the bowl, or combine in the processor and pulse, until the dough starts to form a course meal. Add the water as needed, 1 tablespoon at a time, until the dough comes together and you can form it into a single ball. Add the chopped rosemary and pulse to combine. On a lightly floured work surface, cut the dough in half. Shape each piece into a square about 12 inches wide. Wrap each piece in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 375ºF. Lightly oil 2 baking sheets and dust with flour (Erin’s Note: I always use Silpats). Roll out 1 piece of dough, trying to retain its square shape, until it reaches a thickness of 1/8 to 1/4 inch. The desired thickness can vary to your taste; note that the thinner the cracker, the crisper and the more delicate it will be. Lightly prick the dough all over, every half inch or so, with the tines of a fork. Lightly brush the top with water, sprinkle with additional salt, pepper, and chopped rosemary, then give 1 or 2 more gentle rolls with a floured rolling pin to press the toppings into the dough. Cut the dough into the desired shapes. (Erin’s Note: I used mini cookie cutters shaped like stars, hearts, and ruffled circles). Carefully transfer the crackers onto the prepared baking sheets using a scraper or a spatula. Bake for 8 to 20 minutes, until evenly browned. Check the crackers after 8 minutes; their cooking time will vary by size and thickness. Small, snack-size crackers might be ready, whereas larger crackers could require longer. Note that all the crackers might not be done at the same time��"those around the edges of the baking sheet might cook more quickly. Cool the crackers completely, and store in an airtight container up to 1 week or more. These crackers also freeze beautifully for several months. Put the oats into a food processor and pulse until finely chopped. Add flour, salt, pepper, rosemary, baking powder, and butter and pulse until mixture resembles coarse meal. Add milk and pulse until a dough forms about 15 seconds. On a lightly floured surface, roll out dough to 1/8-inch thick (about a 13-inch round) and cut out about 60 square oatcakes. Petra, I guess being lean to begin with, a day in a panic, with no food or water just made her ribs a little more visible. I've always had longer hair dogs so I never noticed ribs... Dinkie, I'm so sorry for your loss. It was easy enough to get attached after 36 hrs so I know you must have been devastated. :( Calliope, I got an 80 on the profile, 4 stars - only concern was 'no fenced yard' :) Anne-Marie, Gordon is adorable! But after 2 sons, a dh, and a tomcat it's time for a little girl! I think we have a really good idea what we're in for, ZippityDooDog was a crackling ball of energy, not tuckered out at all from her outdoor adventure. I talked to the breeder (a couple who are both DVMs and breed specifically for temperament)and we are on the list for a late Oct litter, ready by Christmas, little girl. We are visiting their farm next weekend! Super nice people - they interviewed me as much as I interviewed them lol. "Northgate terriers are members of our family. I bet a recipe of hot spinach dip or artichoke dip would be good with grated pepper jack added! And that dip will freeze as well.

This dip is a T&T recipe; I would sub the pepper jack for the parmesan and omit the jalapenos unless you want it really spicy.

Jalapeno Popper Spread

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese

Directions:
1. Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
2. Microwave on High until hot, about 3 minutes.

Melt a slice on a grilled burger or chicken breast for a sandwich with a little kick.

It would be good subbed for the cheddar in this salad.

Layered Mexican Salad

Dressing:
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup jarred salsa
2 T chopped fresh cilantro
2 tsp fresh lime juice

Salad:
1 romaine heart, torn into bite sized pieces (about 4 cups)
1/2 small red onion, sliced thin
2 cups cherry tomatoes, halved (quartered if large)
1 cup fresh or frozen corn kernels
1 (16 oz) can black beans, drained and rinsed
2 ripe avocados, pitted, skinned and chopped
1-1/2 cups shredded sharp cheddar cheese (I used Mexican blend)
2 cups crushed tortilla chips

For the dressing: Whisk all ingredients in medium bowl.

For the salad: Place lettuce in large serving bowl. Spread half of dressing over lettuce, then layer with onion, tomatoes, corn, beans, avocados and cheese. Spread remaining dressing over salad. Sprinkle with tortilla chips. Serve. (Salad can be refrigerated for 1 day; reserve tortilla chips until just before serving). Serves 6-8.

Grilled cheese (on sour dough) and topped on burgers are two of my favorite pepper jack ideas. Simple pleasure.

I love to put pepper jack cheese in my meatloaf -- just cube it and mix it in.

It doesn't take me long to just snack my way through a pound of pepper jack cheese. It's my favorite snacking cheese. But I also use it in some of the ways mentioned above, such as the grilled cheese, shredded into tacos, shredded on top of baked potatoes...etc. Basically, I use pepper jack in all the ways I use cheddar.

I'd also be snacking on that....but it's also grated on top of a green salad.

Great ideas! I kept looking at it and drawing a blank. For snacking cheese I like an aged cheddar or aged gouda. Enchiladas and that salad sound perfect as I can use it in a dish to gift back to the person who gave it to me.

I stoppped in just to see the suggestions. I seem to just snack it away on crackers too but there are some great ideas here!

Make a pork fajaita with lots of cheese.
Pulled pork seasoned with cumin, chilis, etc., onions peppers, and your cheese in a soft tortilla. Make a bunch and freeze 'em!

Make a "pizza"..crust...pressed out thin, docked and parbaked spread with pesto, very thinly sliced sweet onions and roma tomatoes ( blotted to remove moisture)....topped with grated pepper jack and baked about 10 minutes at 425.

I like to sprinkle cheese on scrambled eggs & hashbrowns. Pepper Jack wold be great on both.
