Recipe for Enchilada Sauce/BBQ Sauce
Comments (2)Agree that you can always find the basic recipes at NCHFP or in the Ball Books. If you don't have the books you really need to and NCHFP's site should be bookmarked. Enchilada sauce means very different things to many people but it basically a spiced green or red tomato sauce. NCHFP has recipes for at least 8 different tomato sauces. Or you can always can plain tomato sauce and quickly spice it up at prep time. That way you avoid the problems with spices intensifying or going bland in the jars. Comments (16)Dear Gary... I read your request a few years ago, and was wondering if you ever found the original Stickney's BBQ sauce recipe? Stickney's was a staple in my family's life, all the way through the early 80's until they shut down San Jose's Stickney's on Steven's Creek...I always ordered the hot pork sammies and dipped the fries in that OMG sauce! lol..The Chicken Noodle Soup and mile high strawberry pies were off the charts too..The closest I've come to getting that original taste, is Heinz 57 BBQ sauce with honey...I miss my childhood haunts...Santa's Village & Frontier Village as well! Comments (9)If I have a BBQ sauce stain, I use an enzyme pretreater such as Shout or Seventh Generation. I'll treat the stain for 5 minutes then wash on warm (80-90F) with Tide F&G liquid and it comes out every time. I'm worried that all your washing might have set the stain. Don't put it though the dryer until the stain is gone. Another thing that works is the Tide To Go Stain Remover pen. Comments (10)We have made some in the past -- years ago, and they were sweet and flavorful spicy -- not so much heat spicy. It has been long enough that I cannot tell you which recipe or what book (sorry, we didn't repeat because it was so much stuff, so long to cook and after a few batches still wanted to adjust -- not worth it for us) -- but they are out there. You can always adjust the heat in a recipe to suit your taste if it is otherwise close. The 2 hot red peppers can give a wide swing -- and the cayenne amount from 1/8 to 1-1/4 tsp is a big swing too. I wouldn't add the hot sauce or cayenne until tasting. Check the Ball canning book and some other canning books.
