Testing Fair Entries

As you know, the Grandkids and I enter the county fair every year. Makayla and Bud came to spend a couple of nights, Bud's already been keeping an eye on the garlic, his bok choi, maybe some radishes, and probably a dozen eggs from his hens. Makayla wants to enter some baked goods, so we've been testing.

We made some sweet cherry hand pies, I think they are keepers:

She'd never made scones before, so we started going through recipes. She settled on this one:

Something I'd never made, peanut butter chocolate chip, but they were very good, she had to test:

We also tested some Nutella Bread, which she took home before I got a chance to take a picture and we're considering a chocolate cake roll. Meanwhile, though, she was kind enough to roast some coffee for me. I let her pick the kind, she chose this because the name made her giggle:

A medium roast and it was ready to set overnight to "off gas":

A cup was lovely the next morning with the scones, which were very good but a little sweet. She loved them though, so fair entries they will be.

Bud also spent the night, he and his sister both went to "circus training" the next day put on by the local Arts Council. Makayla learned to "fly" on the trapeze and walk the tight rope, Bud learned to walk on a barrel and do magic tricks. Kind of. Bud mostly just took bows, popped wheelies on the little clown bikes and rode inside the barrels while other kids walked on them, LOL. Makayla was serious, as she always is, and focused. They put on a circus for all the parents at the end of the day.

A swim in the pool and some baking and they were ready for bed. So was I!

Omygosh Annie, those kids crack me up! I'm exhausted just reading the events of the weekend. LOL. Mikayla is too much with the poses that go with the baked goods. If only she could put pictures next to the product she'd win blue for everything. And Bud, going inside the barrels. What fun. Thanks for the glimpse into your life. Always appreciated.

I'd leave them but check on them every day. Fruits can get bigger even when the plant looks like hell. And I'd take off any others.

Well, the Jr salsa in quarts got the blue and so did my salsa in pints (they never remove the bands to see that the headspace isn't clean - I always have trouble with tomato-based stuff bubbling up and leaving residue, even if it didn't siphon like my first PCed tomatoes did). DD's jelly (which was made from storebought juice so the juice was clear, we thought the candy and pectin was all dissolved before she added the sugar) did too - and the kids get really fancy ribbons with rosettes. She's over the moon, so I don't want to burst her bubble. One kid had a beautiful peach jelly - that got the blue too. DD's was the only "Other Jelly" so maybe that's why she got it, though I had the only "Other Jelly" in the adult class and only got a red for Apricot-Pepper (which I shouldn't have gotten at all, I had some beautiful stained-glass looking jelly from Carol's Confetti Jelly recipe but no pectin added, it wasn't set hard - I don't like hard jellies, esp. pepper jellies - so I put some vinegar and apricots in a pan, boiled, let stand overnight, opened the jars and added, then boiled it down hard - it set up all right, and all the peppers were at the top since it set so quickly I couldn't do the swirl thing after they'd cooled a little. It also turned kind of brown. Not my best effort but I didn't have anything else to submit in the "other" category. They said they won't change categories but we saw some in nuts (our hickory nuts won blue). I did see some fresh peppers disqualified b/c they were sweet and had been submitted as hot, etc. And note on 1 canning entry (fruit, I forget what) about bottoms of jars not being clean. I guess it all depends on the judge. Not many canning entries this year - I forget if we went last year (I didn't enter, too busy) but 2 years ago when I entered there were a lot of canned goods. This year the adult canning section took up 3 shelves, maybe 6-8ft long. One lady (I saw when I was dropping mine off) submitted 3 dozen jars of jam/jelly (3-5 per variety depending on whether it was single flavor or collection), I saw her name on pints/quarts of canned fruit too, there was another name that seemed to come up quite often (they display the names on the tags of the winning items after judging) that since there were so many ribbons awarded, only 2-3 entries in a few classes like strawberry jam, applesauce, peach jam, that there were most likely only half a dozen people who entered canned goods at all, another 3 did maple syrup and there were a few others who did dehydrated, vinegars, etc. that I didn't look closely at.

Test Cooking a Range - What did you test?

I did not get to test my range but these are some things that I see might be a problem in hindsight. Before you go- I would first prioritize your needs. For me the oven is important. Others want high heat for the burners or have other priorities. Take a hard look at your cookware if you haven't already. Understand the properties of the metal it is made of. Cookware is the interface of the food to heat and will extend the capabilities of any burner. Cookware with poor heat conduction will limit the function of any range. Most burners in prostyle ranges are wider so consider the shape of the cookware as well. It is also helpful to understand in buying bakeware. If you are testing high heat, you really can't use nonstick except maybe the newer ceramics that withstand high heat. Understanding Stovetop Cookware Materials-of-Cookware For the oven, maybe take some cookie batter and put several pans in at once. Cookie sheets should be shiny and aluminum. Cookies can burn or cook unevenly in the best oven if you use dark or steel cookie sheets. If baking is your thing you might want to see how it bakes other things. Check how the convection works. If you haven't had it before, it is different brand to brand and a learning curve. There is a difference between just a fan and third element convection. Turn the oven on and check the door temp after one hour. Observe how much heat is put into the kitchen or on you if you are standing in front of it cooking. Check out the lighting in the oven. Does it glare and can you see what is cooking. If you have rolling racks, take them in and out. I change my racks around a lot so leave a rolling rack in the bottom but don't like them for the upper rack(s). Check out the broiler. Some infrared broilers are very narrow. I use my broiler for half sheets and it is not what I would choose. If you are grilling a couple of steaks or small amount of fish mostly it might be great. For the burners, check how quickly the pan recovers when you add food*. Check how the pans fit the burners, especially a consideration if you use cast iron or steel or have small pans that allow the flame on high to wrap around the pan. This can be on open or sealed burners. Bring something starchy like a can of spaghettios and see if the burner will hold them on low without scorching. This can also be affected by the type of pan. A small LeCreuset being cast iron will hold the heat and be hotter than an aluminum or copper pan. Check the sensitivity of the knob in controlling the heat. Look at the grates and lift them. Check how the range is cleaned. This is very subjective. Write a list ahead of time starting with looking over the range while it is cold and starting with things like putting your starchy item on to hold and preheating your oven. If you have a written list you won't forget anything and you can keep notes. also bring a camera.

Adorable! A very busy kitchen.
Trying a new recipe this morning that i would have loved at that age...

Annie you are the perfect Grandmother. So much love in those pictures. I hope the kids win lots of ribbons. But what is Madison entering? Thanks for keeping me shaking my head at the things you accomplish! Mary

What fantastic pictures, Annie. You are creating wonderful memories.

I'm jealous of your health that allows you to be so active. I'm having a flare-up and can't feel either arm/hand today so it's weird trying to type. It's probably stress induced and, hopefully, won't last long. Oh well, I should not complain and surely should not be jealous. We are all given Blessings. Health just isn't one of mine. :)

Makayla's hand pies would win a blue ribbon in Canada with those little maple leaves.

Matthew was a counselor at a Circus camp for a few years when we lived in the Sault. I loved going to the Circus show each week to see what the kids had accomplished.

Makayla is really a beautiful young lady. Bet Bud is a very handsome young man. I love the choices Makayla has made to enter at the fair. They are so lucky to have such an encouraging Grandmother and you are so lucky to have such great grandchildren.

Ann T, I thought of Canada when she chose maple leaves and thought maybe they should be maple or something more "northern" than sweet cherries. She could have chosen hearts or acorns or apples, but she liked the maple leaves.

So there was a "circus camp" in Sault St. Marie? I'd never heard of such a thing until they advertised it as a day-long kid's camp. I loved the show at the end too, the kids had such fun.

Mary, Madi is just a little young to work on fair entries, although she loves the baby turkeys at the farm. She is not too little, though, to eat Elephant Ears with Makayla and Bud, so she'll have fun too.

Thanks, everyone, I'll let Makayla see this thread. Or maybe not, she'll get a big head. (grin) She's always lobbying me to take a picture of something we've made for "the forum", then I have to get on the internet and show her the pictures, she loves it.

I am one lucky Grandmother, for a lot of reasons.

Annie, as always, thanks for sharing your family with us. It's wonderful to see the kids growing up, even if it is virtually.
