What's your favorite thing to do with pea shoots?

Our farmers market had some yummy ones and I use in salads, but wondered if anyone has another favorite use.

I use pea shoots for a salad. Here's the recipe:
Pea Shoot Salad

For salad:
3-4 cups Pea Shoots
2 oz. Apple Wood Smoked Cheddar, finely shredded
2 tbs. Pine Nuts, toasted
1 Blood Orange, sections
2 Scallions, thinly sliced

For dressing:
6 tbs. Olive Oil (a nice grassy EVOO)
1 tsp. Roasted Garlic
1 tbs. Aged Balsamic Vinegar
1 tbs. Champagne Vinegar
2 tbs. Orange Juice
1 Blood Orange, zest

I also very quickly saute them with a little olive oil and serve over salmon.

Stir fry with garlic and ginger. Yum!

Agmss, that does sound good, I've never cooked them, but am going to try it tonight.
