roast beef for lunchmeat

I plan to roast some beef to a nice even rare for deli-style lunchmeat. We have an electric slicer, so can get it quite thin. It seems to me that toughness won't be a problem if sliced this way. I'm looking at the inexpensive rump roasts and various round roasts. Any reason this won't work?
