Making Picnic Plans :-)

Hi everyone,

So, my friends and I are finally going to have our picnic sometime this month. The friend and her husband who are hosting us (well, where we'll be meeting at), is supposed to call me in a few days to work out the schedule of things to do. The menu is all planned and I've even started a shopping list for the things we'll need lol.

LOL it said no dogs :-( ..... at times I am the dog I even grow the bones LOL Seriously though the six or so hour drive is in next years plans. Should propose it as a group trip for the C&S club here and invite our sister group in Ct.

I was going to suggest chicken salad too, but since your husband doesn't like it, maybe a tuna salad (or a some of each in case your guests don't like tuna). How about some homemade soups that you can just warm up (can you easily eat that on a boat?) and some tea type sandwiches with cheese and fruits? Or how about a green salad with all the fixings including meat like cold steak slices. I'm trying to think of things that hold up well and are ok warmed up...how about stuffed peppers, lasagna, or even a good stew? I know you said picnic but since you're missing the grill and your husband won't do chicken, I'd focus more on a "luncheon" type menu.

One other tip: When using the hole saw, do the following: 1) Carefully drill a small diameter hole all the way through the table top (do your best to make this perfectly vertical). This will act as a guide for the center bit in the hole saw. 2) When you drill with the hole saw, only go half way through the table, then flip the table over and finish drilling from the bottom side. This gives a much cleaner result.

Let me just say that traffic was not bad at all! There was a slight slow-down as we approached Borrego Springs Friday morning, but no more than a 5 minute delay, and the scenery was beautiful, and so there was no reason to rush. This is the only place that was somewhat crowded:This is a tiny part of a huge field of yellow flowers along Henderson Road, and the field extended on both sides of the road. This site was one of the main locations indicated on the park service map. Despite being crowded, you can notice that there are no people in this photo! We never made it to Oasis Date Restaurant, as they were closed by the time we got there. We did go to Shields Date Garden three time - first to pick up same dates to take with us for Saturday. I bought an assortment that includes Zahidi, Medjool, Blonde, Khadrawi, Deglet Noor, and Abbada, although I cannot tell which is which, although I can I identify the Blonde dates. All of them are very good, and I only regret that I did not buy a larger package. There are only slight differences in flavor and texture. We had breakfast there Saturday morning and went back Saturday evening for dinner, since Oasis was closed. Food was very, very good both times, and the setting for dinner in the evening was gorgeous - Kevin took photos that I will post later. Saturday for lunch we had our picnic at what looked like a stagecoach stop (photos to follow), and we made rolls/wraps with lavash and chicken salad. We did not eat any of the crackers. Traffic on the way home was light as well, and so I'm not sure why there were warnings about heavy traffic. I think that was just put out by the San Diego news, for whatever reason. A lot of the photos I took really do not do justice for the views we saw in person. A lot of the hills were covered with bright flowers, but they were sparse enough that they did not create a full blanket of color the way the wildflowers in Texas do. There were also some hills covered with barrel cactus and/or ocotillo, and the ocotillo flowers and barrel cactus are not in full bloom yet. Still, since it was in the mid 90s while we were there, I do not want to go back later in the year when it will be even hotter. It is a dry heat, however, and so it was not really uncomfortable, but definitely swimming pool weather.

I will keep everyone posted about the picnic plans. I have to call the one friend who is joining us tonight. Just to refresh your memories, here is the menu I have written down.

Gram's Lemonade
Alabama BBQ Ribs
Twice Baked Potatoes
Veggies & Dip
Buffalo Chicken Dip & Tortilla Chips (the veggies can be dipped in this too I figured lol)
Peanut Butter & Chocolate Rice Krispie Bars

We may make some modifications or additions to the menu. The sauce for the ribs sounds a little sweet, so I may add some of the wing sauce for the buffalo chicken dip for a little spice, but not too much since I and another friend don't like overly spicy foods. I cannot wait until my friends and I get together! Rain or shine, it'll be a very fun day :-).

All recipes have now been written down. I might have to take some cards with me in case anyone wants the recipes of the menu items.

Ok, it is getting much warmer, now you have to make a lot more Gram's Lemonade.

dcarch, That won't be a problem lol. If it's a warm day, I think 3 gallons of the lemonade will go fast ;-).

I agree, you'll want LOTS of your Gram's lemonade. Everything sounds delicious and I know you've been looking forward to this.

I get to start making more official plans tomorrow when my friend (who, along with her husband, are hosting us), calls me and we figure out a schedule for the big day :-). I'll let everyone know how tomorrow goes!

Just talked to the friend who is hosting us. Our plans are more concrete, but, still no official date for the picnic. That is, until she figures out what days she has to work. Keeping my fingers crossed!

I'll try and remember to take pictures, for sure! LOL dcarch, I'm thankful our friend who is hosting us lives out in the country, but I think our picnic may be moved to the end of the month. Some plans came up for my one friend and she may not be able to make it.

Well, it looks like the picnic is to be rescheduled yet again. This time for next month. I do have my 5 year class reunion coming up, and we'll be bringing covered dishes for that event. Hmm, I think I'll make a dessert or two to share, and make Gram's Lemonade as well.
