I scored one of these Vollrath counter top steam tables at a rummage sale yesterday for $8.
It's thermostatically controlled (a rotating dial w/#'s 1 thru 10). There is a 'heat plate' type thing built into the bottom.
Questions--Can I turn the thermostat all the way up to 10 and plug the appliance into a PID to control the temps for sous vide?
I'm worried about the hot plate in the bottom. Can I use a wire rack to prevent the food pkg from contacting it?
Should I use a water pump to circulate the water? (I'm concerned that food closer to the heat plate will be subjected to water that's hotter than it's sposed to be.)
Are there other concerns that I should have & what are they?
I plan to use a cookie sheet 'lid'...is the 'only' 700 watts going to be enough oomph for sous vide??
