fat to render from half cow - Annie?

I plan to ask for the fat to be coarsely ground. Is there anything else I need to know?

Will the fat be any harder to thoroughly rinse if it's ground? I've only rendered tiny pieces of fat, so little experience here. I just know how wonderful it is for browning beef. I'm not sure what else I'll use it for, but maybe some friends will want to try a jar.

I haven't rendered suet for a long time, although we did it when I was a kid. Grandma didn't waste anything. Now the only thing I ask for the fat/suet for is to feed to the birds like woodpeckers and nuthatches. I just don't care for tallow or suet and so I don't render it myself.

Anyway, it's much like rendering lard. If you add water, you have to heat it longer to drive the liquid off, and I think that it lengthens the process. Dry rendering is faster, but must be watched more carefully, so it depends on your time and your methods.

Good luck. Beef fat is actually pretty good for frying things, the smoke point is relatively high.

I thought it over for a while, let if cool some & tasted it again later. It was really, really bitter. BF suggested an apple, but this was so icky I decided to cut my losses. I have four more chicken thighs in the freezer, so I will make chicken stock with onion skins when it's time to cook those. I suspect it was the celery that made it bitter. It smelled totally fantastic and had rosemary, thyme, peppercorns, and bay leaves in it. Hmm, maybe too many bay leaves, I think I had 4 in there because I really like the flavor & it was a 6-quart pot. My vegetable stock from frozen scraps is always passable but not fantastic, so I think I'll switch to saving just the onions & maybe one or two old celery stalks & carrots instead of every scrap that comes across the cutting board. Sounds like the perfect excuse to build a worm composting bin! Thanks for the support, I will definitely can some chicken stock when I'm ready to cook the rest of this chicken. Melissa

I have not read the rest of this thread, just this most recent post, but I got 1/4 beef last week. The cow was apparently on the smaller side, at 610 pounds, so we paid our price per pound based on 1/4 of this total weight, so our portion was 152.5 pounds. We buy through a small local store, so our price per pound includes cut and wrap and everything in one number. We have 36, one pound packs of ground beef, about 18 pounds of stew, stir fry and cubed steaks, 10 pounds of steaks (we opted for rib roast for Christmas rather than rib steaks, and we chose to have more other roasts than steaks, so our steaks are NY strip, top sirloin, tenderloin and tri-tip), about 30 pounds of roasts and 6 pounds of "soup bones". I told them I wanted a share of the organs, they just left it for me to work out with the store, I think it depends what the other buyers want, but you should be entitled to a share of the organs. I'm not sure why, and we didn't get this before, but they also packaged about 25 pounds of bones and 18 pounds of "beef scrap". I have not gotten these when we've gotten beef before, even last year through this same place. Maybe it's because we discussed the organs being for the dogs (though I declined "dog bones" ) but I wanted soup bones, I really don't know. I'm going to thaw a pack of the scrap and see if it's feasible to cook that for the dogs, but I may also share it with my neighbor who hopes to have a deer to process this fall. Anyway, I just had to throw in that last part because all of this, including the 43 pounds of stuff we've not gotten before, fit in 3 cardboard boxes. Heavy boxes, but still will fit in the car with no problem. I think without the extras, it would have been pretty close to fitting in just 2 boxes.

Madonna, for you I'll also pray for no snow, so you can get to your DH without any driving issues. Dave, my mechanic/son-in-law assures me that if your vehicle runs OK, just ignore the light until you can conveniently deal with it. It can be anything from the gas tank cap not being on tight to a loose wire in the radio. If it runs OK, just go see DH and get to the Jeep repair when you can. I was hoping you would get to go south, but with DH in the hospital, I guess that's on hold. (sigh) You'll both be in my prayers, stay strong, I'll be thinking of you. I really like the Nathan's Never Fail pastry recipe, but that other poster was having such an issue with home rendered lard that I decided to haul out the most basic recipe I had, one that specifically called for lard, and use it. The recipe actually made enough for three crusts, as I tend to roll my pastry somewhat thin, so I have an extra in the fridge right now. Maybe coconut cream... LindaC, you're right, I'm not worried about my driving, I'm worried about everyone else's, snow or not. And don't even get me started on those people who need to be talking on the phone or texting while driving, and can't even get through the pharmacy drive-thru without holding up the line behind them because they're busy texting instead of watching where they're driving! As for the pie crust, I usually don't measure the fat very carefully, I plop it in. About half a pint jar of lard in the fridge? That's probably a cup, or at least it's close enough, LOL. I remember Grandma used to use a two cup measure, add a cup of water then fill with lard to the 2 cup line. She'd then use some of the water for the crust, and didn't have a greasy measuring cup to wash because the fat floated in the water, so I know she was more careful than me! Annie

Sure, Artemis, here it is: Jalapeno and Cracklin' Cornbread 1 cup cornmeal 1 teaspoon salt 1/2 teaspoon baking soda 1 tablespoon butter or lard or bacon grease 1 cup pork cracklings (fried pork skins) 1 egg 1 jalapeno pepper, seeded and minced 1 cup buttermilk 1 cup shredded cheddar cheese (optional) Preheat an oven to 425 degrees. Stir together the cornmeal, salt, and baking soda; set aside. Place the butter/lard/bacon grease into a 9 inch cast iron skillet, and place into the oven until the skillet is hot and the shortening has melted. Meanwhile, beat the egg in a bowl along with the jalapeno pepper and buttermilk; stir in the cracklings. Stir in the cornmeal mixture until moistened, add cheese and stir, then pour the batter into the preheated skillet. Bake in the preheated oven until the top of the cornbread is brown, and it feels firm to the touch, 30 to 40 minutes. Turn out onto a serving plate and cut into wedges; serve immediately. Sometimes I add the cheese, sometimes not. I also like to melt a little lard, add some chopped onion, maybe 1/4 cup, along with the jalapeno, saute until it's starting to brown and use that. I've added a can of chopped green chilies instead of the jalapeno when I didn't have anything else. I've crumbled some bacon in instead of the cracklins. It's very forgiving, LOL. I see that most of the recipes call for boiling the cracklins and I'm not sure why, maybe homemade ones are different than commercial ones? I like the nice crunchy pieces in the cornbread for texture, so I never boil mine.

I've used bits of fat from stock, or even cooked meat in the past. I love it for browning beef for stew, etc. It really ups the beef flavor. I'm not sure the rendered fat will have the same effect, but I want to find out. With any luck, it will be a lot cooler outside when I finally get around to it. I'm assuming the chunk of fat will fit in the freezer...

Liz, it depends on how fat the animal was, LOL. Dad asked for the suet for the birds on one of our cattle before we switched to grass fed. He ended up plugging in a small freezer we weren't using, just to store the big plastic bags full of fat he got from that steer.

Animals today aren't as fat as they used to be, so you probably won't have a freezer full. You could always have the processor chop it up for you and just do a crockpot full at a time, then you wouldn't have to watch it so diligently.

LOL! Maybe I should limit the amount I ask for. This is a two year old grass fed cow, so it shouldn't be that much. I think a crockpot full is plenty to deal with at a time. My activity is pretty limited, so DH gets roped into helping with stock-making, etc. He doesn't mind, and I try to keep it that way. ;) That means keeping the projects fairly small. We once spent an entire weekend making stock and cooking things for the freezer. Neither one of us wanted to cook for a week after that!

I've been reading blog posts about tallow rendering. One woman used it on her face when she was out of her usual moisturizer. The next morning her skin looked fabulous - much better than usual. It turns out that the anti-oxidant profile is perfect for human skin. This was tallow from muscle fat, not the harder leaf fat. I'm not sure I'll try this!

I've only done dry rendering, with a small piece of fat. The recommendations I've read are for wet rendering, i.e. with a small amount of water added to begin with.

Liz, I'm not sure I want to smear cow fat on my face. (grin) Well, unless it's a byproduct of eating beef and I get messy!

Grandma did both, but tended to like the wet rendering process because she didn't have to watch it so carefully to avoid sticking or scorching. Of course, she didn't have a crockpot or a roaster, just the stove.
