Raw Poultry - Recommended Precautions?

Again, thank you to triciae for reminding us of the need to take precautions when preparing raw chicken. Which brings me to the question - what precautions should we take? I thought we should have this in a separate thread, so here goes.

Yesterday, I deboned four chickens, grilled two over rosemary branches, stuffed and tied and roasted two in the oven. What contamination precautions should I have taken when doing that? Bleach spray down? Separate boards? Gloves?

I'm looking for things I can do to improve my own practices.
