T&T Fish Head Recipes?

Also a question triggered by my local small Asian market.

I've mentioned the meat section being mostly offal and weird bits.

The fish section is almost as peculiar. They do have some whole fish, and another reason I like this store is they reliably have mackerel or small bonito. If I craved catfish I'd be in luck as they often have a tray of gutted catfish.

But the offal theme persists, because they always have a big tub of salmon heads.

What, I wonder, do you do with five pounds of salmon heads?

A sushi place I loved back in the day used to have salmon nose that had been marinated for a long time (weeks) in sake. My grandfather used to enjoy fish brain, so the head was always saved for him. Otherwise, I can't recall ever using fish heads in cooking.

So how about it - any T&T Fish Head Recipes?

To make cold smoked salmon, I buy the whole salmon and filet the fish myself.

I have a few salmon heads in the freezer which I will be cooking sometime. But I probably will not use any recipe.

The only thing I know I will be doing is to pour smoking hot oil over the whole cooked dish. I will be doing that outside, because there will be splatter all over.

I've used fish heads (and racks) in the past to make stock, but that was always cod, haddock, hake, pollock, etc. I'm not sure I would like a stock with salmon heads in it, but it might work for you.

And aren't the cheeks some sort of delicacy?

how interesting that deborah started this thread today--thank you! there is a very small (and CRAMPED) oriental market not terribly far from us and we stopped there yesterday to look around and pick up a few things just unknown to us. it was fun! i'd never had any thai food until 2 years ago and there was a nice restaurant that had a very small buffet every day. pad thai and tom gai soup were always there and most of the other dishes changed daily. i LOVED that soup and when i spotted fresh lemon grass yesterday, decided i had to attempt making it. there are about a dozen recipes for it on the "food down under" website and they are pretty similar to the one deborah posted. having said that, i simply don't recall the taste of either something like ginger (as a sub for galangel) or chili peppers in it but guess i'd be wrong about that :) in any case, i have dried red pepper flakes, or sweet chili paste with garlic or chipotle peppers in adobe sauce that i can use (VERY sparingly in our household). anyone have any suggestions on which might work best in this recipe? and maureen--ex or no, those sound like really great memories to me! it must have been quite the adventure for all of you! Made this for dinner last night for the first time. What a delightful surprise this meal was, simple, easy, can be served hot or cold. Not only was it a wonderful meal, but on a hot summer's night wiht the AC not working, it didn't heat up the kitchen either. POACHED HADDOCK WITH DILL SAUCE SERVES 4 From Try foods intl. inc., America's favorite recipes INGREDIENTS 1/2 cup non-fat plain yogurt 3 tablespoons low fat mayonnaise 1/2 cup cucumber, peeled, seeded and chopped 1 tablespoon fresh dill, chopped 4 haddock fillets 3 cups water 1/2 cup white wine In a bowl, mix yogurt, mayonnsaise, cucumber, and dill. Season with pepper and salt if you desire. Chill for aat least 1 hour. T0 COOK FISH In a large skillet, bring 3 cups water and the wine to a boil. Add fish; simmer until fish flakes easily with a fork; about 10 minutes per inch of thickness. Haddock may be served hot or chilled with the sauce spooned over the fish. My changes. Added only pepper to the sauce and doubled the sauce recipe. Simmered the fish by spooning the liquid over the fish for about 5 minutes and then covered skillet for about 5 minutes. Served fish hot with sauce on top, with a side of steamed baby carrots and a salad of romaine lettuce, very thin sliced cucumbers and a small amount of the sauce as a salad dressing on the salad.

Opps, I knew that I was forgetting something, i.e. a finely chopped jalapeÃ±o pepper. How could I forget the most important ingredient? OK, I don't have a recipe with measurements, because I "eye" it and just add what I have in the house. And regardless of what kind of seafood ceviche I make, i.e. fish, shrimp, scallops, or a mix of all of these, I like to put the seafood into the lime juice to let it marinade until it turns opaque. I then remove it from the lime juice and add finely chopped onion, finely chopped cilantro and finely chopped tomatoes to the lime juice and then add the marinated seafood. Sometimes I'll add some finely chopped pimento stuffed olives. Serve very cold with crackers.

I love twice baked potatoes, so I'll be saving this entire thread! LOL Her's a favorite of ours. We often have them as a meal, served with just a salad or side of vegetables. Andouille and White Cheddar Over-Stuffed Baked Potatoes Recipe courtesy Emeril Lagasse, 2000 8 large baking potatoes, like Russets Drizzle olive oil Salt Freshly ground black pepper 3 tablespoons olive oil 2 cups thinly sliced onions 1/2 pound andouille sausage, ground 8 tablespoons butter 1 to 1 1/2 cups cream fraiche 1/2 pound white cheddar, grated 1/4 cup chopped chives 1/4 cup chopped parsley Preheat the oven to 400 degrees F. Season the potatoes with olive oil, salt and pepper. Place on a baking sheet and bake until tender, about 1 hour. Remove from the oven and cool. In a saute pan, over medium heat, add 2 tablespoons of olive oil. When the oil is hot, add the onions. Season with salt and pepper. Cook until caramelized, about 8 minutes. Remove from the heat and cool. Meanwhile, in a saute pan, over medium heat, add the 1 tablespoon of oil. When the oil is hot, brown the sausage, about 6 minutes. Using a slotted spoon, remove the sausage and drain on paper towels. Set aside. Using a sharp knife, remove the top 1/4 of each potato. Using a spoon, remove the flesh from each potato, leaving about 1/4-inch border on each potato. Set the hollowed potato shells, aside. In a mixing bowl, combine the potato flesh, butter, and cream fraiche. Season with salt and pepper. Using a hand masher, mash until smooth. I've used striped bass heads for making stock and I have buried them in my garden beneath corn plants as fertilizer.

I have eaten fried cod cheeks many times. These are about the size of sea scallops and somewhat similar. When steamed whole fish is served at a Chinese restaurant, we are careful not to miss the cheeks, even though they are small.

My Aunt Yoshiko always made fish stock with the heads, tails, fins, backbone left from filleting, and I wouldn't hesitate to use salmon heads to make stock for chowder.

As I was a child, I didn't pay attention to what she did with the cheeks, but I'm betting she used them for something, she was extremely frugal.

Two good recipes posted above. The stock is similar to what i follow. I remove the eyes and never bring to near a boil. Just a small rumble simmer. 10 minutes and turn off heat. Freezes nicely. With salmon i like to make a fish chowder.( My seafood cookbook says the eyes can cloud the stock.) Salmon will be a bit richer flavor being oily but still delish. I always add, at the end of cooking a fish soup or chowder , the final 5 min before serving, a pureed fresh tomato and half a lemon juice. The rest of the lemon i slice paper thin and top each bowl. The little bit of acid gives a nice fresh flavor. (tomato paste or canned would ruin it...way too harsh and metalic)

Wow, the Japanese Salmon head soup looks great! Never thought to use white miso. I have some that i use for a veggie dish. Never thought to make a seafood dish with it.
The small 8oz makes about six soups and keeps in the fridge about 9 months even after opening...my local health food store stocks it.

Old, classic, gefilte fish recipes use fish heads for stock. Not t&t by me, tho.
