T&T Fish Head Recipes?

Also a question triggered by my local small Asian market.

I've mentioned the meat section being mostly offal and weird bits.

The fish section is almost as peculiar. They do have some whole fish, and another reason I like this store is they reliably have mackerel or small bonito. If I craved catfish I'd be in luck as they often have a tray of gutted catfish.

But the offal theme persists, because they always have a big tub of salmon heads.

What, I wonder, do you do with five pounds of salmon heads?

A sushi place I loved back in the day used to have salmon nose that had been marinated for a long time (weeks) in sake. My grandfather used to enjoy fish brain, so the head was always saved for him. Otherwise, I can't recall ever using fish heads in cooking.

So how about it - any T&T Fish Head Recipes?
