I made a pot of sort of vegetable minestrone type thing and it is so sour/acidic I'm sure my guys wont eat it and I'm not sure I will. I need suggestions on how to fix it.
Here is what I did:
Sauteed (EVO) a chopped onion with a soupe of inner celery stalks and leaves. Added some chopped carrot. Tossed in dome rouch chopped cabbage, green beans and a mashed garlic clove. Added a couple of sliced mushrooms. Sauteed until just a bit tender and added low sodium V8 (which I think is the culprit, I've never used the low sodium for soup) and a couple of cups of water with a spoonfull of Chicken Flavor Better Than Boullion. A few herbs. Tasted it and BLECH!
I was planning on adding a can of white beans, a small summer squash and a handful of pasta but I'm not sure I should bother.
How do I tame the tart?
