Canning Fruits and Vegs?

I was wondering if anyone has a good technique for storing fruits and vegetables to stay as fresh as possible until you have enough to can them in a big batch. What i mean by this is that i have a small garden with some pepper plants and fruiting bushes. There are only a few pepper plants and the bushes don't produce alot right now so i wanted to know, how can i store these things until i have enough stored up to make preservers and pickled peppers?

I would prepare them and then freeze in 1 or 2 cup amounts (or whatever you have the amount of) in ziplocks. Doing all the peeling, dicing and pre-measuring will make it easy when you are ready.
