in my area when plants go in teh ground it is highly recommends by everyone from the fruit stand guy to teh extension service that you lay the plant on it's side and bury at least 3/4 of the length that was above ground in the pot. it produces a stronger plant. so burying most of the plant may be ok in your case. i put about 100 plants a year in the ground, all of them i lay on their side with just the upp 2-3 sets of leaves sticking out. only rarely do i have any problems. now, on to watering them. go to wally world and pick up a kid's swimming pool. set your trays inthe pool and fill it with water enough to wick up and bottom water the pots. you may want to set the pots on something in the pool so you can put more water in it. i have had to do this before and it works fine for several day absences.

Lake Lavon looked very similar to that a couple summers ago. There was a road that was exposed that hasn't been seen since the lake area was flooded back in the 1940's. There was also lots of green stuff growing on the lake bed and even farmers allowed cattle out to graze. The land was dry and cracked and there was absolutely no water under the two bridges that went over Lake Lavon. Then last year it rained a lot and it filled back up. Hopefully you will soon start to see rain or you will be rationing water like we here in Collin County. I won't even get into the fact that Dallas County just south of us wasn't on water restrictions and we had to allow water out of Lavon to replenish their water supply from Lake Ray Hubbard that serves Dallas County. That came to a halt when we went into stage three restrictions - watering only on our garbage pick-up day and not between 10 am or 6 pm - but what decent minded gardener would water at those hours anyway?

Here is the recipe from Land of Plenty: DRY-FRIED GREEN BEANS I gan bian si ji dou This is one of Sichuan's most famous vegetable dishes. The green beans are traditionally dry-fried over a medium heat until they are tender and slightly wrinkled... If you want to minimize the oiliness, you can steam them or boil the beans to cook them through instead of frying them, and then follow the rest of the recipe (from step 3) according to the instructions given below. This method is not authentic, but the results are delicious, particularly for the vegetarian version of the dish. Serves 4 with three other dishes 10 ounces green beans peanut oil 3 ounces ground pork (about 2/3 cup) 2 tsp Shaoxing rice wine or medium-dry sherry 2 tsp soy sauce 2 Tbsp Sichuanese ya cai or Tianjin preserved vegetable, finely chopped salt to taste 1 tsp sesame oil 1. Remove any strings from the edges of the beans and trim off the tops and tails. Break them into short sections (about 2 inches long). 2. Heat 2 tbsp of oil in a wok, add the beans, and stir-fry over a medium flame for about 6 minutes, until they are tender and their skins are a little puckered. Remove from the wok and set aside. (If you want to save time, deep-fry the beans at about 350 degrees F until they are tender and puckered.) 3. Heat another 2 Tbsp of oil in the wok over a high flame, add the pork, and stir-fry for 30 seconds or so until it's cooked, splashing in the Shaoxing rice wine and the soy sauce as you go. 4. Add the ya cai or Tiajin preserved vegetable and stir-fry briefly until hot, the toss in the beans. Stir and toss, adding salt to taste (remember that the ya cai is already very salty. 5. Remove from the heat, stir in the sesame oil, and serve. ------------- I haven't made it yet, but it's only my list for when I find green beans. I will substitute ground turkey for the pork. Lars

Add broth or stock or drippings from your turkey. Or add some rendered fat, like bacon or the renderings off your turkey. Perhaps a touch a cream or buttermilk. Don't add more butter or oil. Kind of depends on if it's a general dryness problem, your bread component is too dry, or the livers themselves is too dry. Usually adding liquid like stock or drippings fixes the bread, but might not fix the liver. Usually adding fat or cream/buttermilk can fix dryness in a liver dish like pate, but might not solve an overall dryness problem in stuffing because of all the bread.
