Can I keep rich bread dough in fridge?

I've been making King Arthur Flour's Classic 100% Wheat Bread every weekend for weeks now, and it's wonderful.

Trouble is I can make dough only on weekends because I work long hours. Can I make a double quantity of dough and - after it rises once - stick half of it in the fridge for 3 days and then take it out and bake it after it rises a second time?

I've done that with lean bread (KAF No-Knead Crusty White Bread). That recipe says one can stick the dough in the fridge for up to 7 days, but the Classic 100% Whole Wheat Recipe doesn't say that. This bread contains milk powder, vegetable oil ( I use peanut oil) and honey.

I know there are some very experienced bakers here. Could you please tell me if it's possible to keep rich bread recipe in the fridge? And for how long?
