Cinco DE Mayo Dinner

I hadn't planned on cooking Mexican until mid afternoon when Moe mentioned it was Cinco DE Mayo day.

Was able to find some fresh Poblano peppers at the grocery store, which isn't always easy around here. So I made Chiles Rellenos.


Blackened on the grill. Peeled and stuffed with cheese. Ready to batter and fry.


Served with Black Beans and avocado.


Topped with a quick cooked tomato chile sauce.

Refried Black beans topped with homemade salsa.
