What do you do with coconut milk? Fiddleheads?

Tonight I used coconut milk for the first time. I made a curry with fish and fiddleheads - lots of garlic, ginger, lemongrass, hot pepper and lime leaves. It came out pretty good. I was looking for something different to do with fiddleheads. I was interested to find that they have local varieties of fiddleheads in Thailand and Indonesia.

I use coconut milk in rice pudding and have used it in the past in a Thai soup (which I didn't care for, so I won't bother to post the recipe).

WE have fiddleheads but we mostly just saute them. Grandma used to use bacon grease and then crumble the bacon over top the fiddleheads when serving. I used olive oil instead but they weren't the same, so I reverted to bacon.

Another local delicacy is just starting to pop up, morel mushrooms. I don't care much for them but I love to hunt them.

Wish I was your neighbor - I love mushrooms. Morels, chanterelles, oysters....

If you have sweetened coconut milk, it can be an acceptable substitute. If the coconut milk is not thick enough, you might have to reduce it down a bit or perhaps add a bit of tapioca or cornstarch to it. Adding coconut flakes would also help it to stay together. I've substituted coconut milk for SCM in macaroons, and I like them better. If you 12 oz can of coconut milk is not sweetened, you can add 1/3 cup sugar to it - that's what I do in my macaroon recipe. Lars Here is a link that might be useful: Lars' Macaroons

I just checked my half gallon of light Silk and it only has 80 calories. The only other milk I have in the refrigerator right now is 2% my husband's and it says 130 calories. I always drink skim too, but like them all, even buttermilk. Sue

Coconut milk in cornbread?

There are recipes for Coconut Cornbread using coconut milk (as well as shredded coconut). I buy Wilderness Family Naturals Powdered Coconut Milk by the 5-pound bag and had this recipe in my stash to try using the reconstituted coconut milk. Can't vouch for it because I haven't made it yet, but it is an example of using coconut milk in cornbread. Coconut Cornbread (in a skillet) 1-1/2 c. cornmeal 1-1/2 c. whole wheat flour 3 T. coconut palm sugar (or brown sugar) 1 t. sea salt 2-1/2 c. water (or coconut milk) 1/4 c. coconut oil (or olive or vegetable oil) 1 c. unsweetened, shredded coconut 1 t. baking soda 1 T. coconut vinegar (or apple cider vinegar) 1. Preheat the oven to 400-degrees F. 2. Mix ingredients and pour into cast iron pan (batter will seem very liquidy). 3. Bake for 30-minutes or so. -Grainlady

Do you use coconut oil?

I like coconut oil to moisturize lips, skin, hair, stir fry veggies, make curries, and husband uses it to pop popcorn. From what I've read, the problematic fats are the ones which are partially hydrogenated (trans fats) and, according to medical research, cause all kinds of health issues. They were widely used in prepared foods, but the FDA banned them a few years ago and many companies have replaced them with other oils.

Note that not all fern "fiddleheads" are edible and some are quite toxic. Be sure you know what you are collecting, or buy from a reputable source to be sure. They are never available in the South >

I use coconut milk for ginger soup Thai style, and throw in some chicken or shrimp if I have any. There are lots of recipes on the web for this soup, I particularly want to try the one with sweet potatoes. I also use coconut milk in gluten free casein free baking.

Definitely one needs to know what kind of fern, mushroom or green that one has collected before eating. Fiddleheads have never been a huge favorite of mine but they were really good in the spicy coconut sauce.

Coconut, ginger and sweet potato soup sound amazing. I will check out recipes online. Thanks!
