What should I be looking for?

Years ago we were in a bakery and all the rolls looked delicious..we bought an assortment and the Bear Claws were over the top. Never have we found any to compare. I know they are out there tho.

I am wanting to take on a pastry challange but not sure what Dough I need. I have just completed a batch of Brioche while it is very good, it is not what I am looking for.

Should I be looking at the recipes for Classic Puff Pastry, Blitz Puff, Faux Puff, or a Puff Dough? Wanting something lite and flakey, maybe with yeast, maybe not. These recipes I am finding in the King Arthur All Purppose Baking Cookbook. They all look like they would be time consuming, but that is okay.

Any of you do this type of baking? Tell me what you know.

The kind of Bear Claws I have had have been yeast donuts to I went looking to see what you had because you mentioned "Puff" and found this

Bear claws here are always buns made with a sweet yeast dough. Less rich than brioche. White confectioners sugar icing and little crumbly streussely things on top of that.

I suggest that one take others' blanket statements about two major world brands to be puffs of hot air. Both LG and Samsung make excellent washing machines. The two Korean companies are making a huge push to become the biggest brands of large appliances worldwide, and they are well on their way to that goal. The perfect appliance has yet to be built, and every individual machine may have features or missing features or manufacturing defects that you may find an annoyance. Looking for a stainless steel drum is not a bad idea. Looking for a dimpled stainless steel drum is a better one, but it will limit you to two brands, Miele ("Honeycomb" drum) and Samsung ("Diamond" drum). When local areas of your laundry's fabric get pushed into the drainage holes through which water is extracted in the spin part of the washing cycle, wear of the fabric is accelerated. The drainage holes in the Miele Honeycomb and the Samsung Diamond drums are positioned around the dimples in such a manner as to reduce the pushing of tufts of fabrics through the drainage holes, and, fortuitously, the design also allows the diameter of the drainage holes to be reduced, further limiting push-through. I know from some of the issues with mine - I would open and close every single door and drawer. Ensure that everything is flush and in line. I would also bring a measuring tape for double-checking anything that seems "off". Then there's the more obvious stuff like looking for flaws and scratches.

Looking at the pictures and the description of their process it all seems fine. They installed the pan on floor and 6" up on walls, did a 24 hour water test (where they leave water to make sure there are no holes in the pan), did the mud job on top and then waterproofed it. The only thing left to ask is if they pitched the shower floor correctly so that in the future the water drains out properly.

The quality of the product will depend on the price point you can afford. Nice quality starts around $4/sf (CoreTec comes in around $5/sf when on sale). You are looking get as close to these points as possible: 20mil wear layer (thickness of urethane coating over the vinyl itself) 5mm total thickness or better Rigid plank (8mm thick SPC core, etc) The one thing you need to know as a homeowner: 1. The labour to install ONLY covers installation - nothing else 2. Subfloor preparation is going to be more expensive than you imagined 3. The homeowner is responsible for the appropriateness of the material chosen What does this mean? You will need to pay for removal/disposal of carpet ($1/sf is common). You will pay for removal/disposal of tile ($2/sf is common). That's the demolition side of things. Now onto the PREPARATION side of things. You will need to pay for subfloor preparation. Vinyl needs FLAT and SMOOTH! Seriously...the thinner the vinyl plank the MORE work you need done. Be aware that carpet hides the WORST subfloors in the building industry. The subfloor under the tile will be in better shape than the carpeted area....no I'm not kidding. So preparation costs are often $2/sf (can be as high as $4/sf....but that is rare...but be prepared for it just in case). The time added to the job is another 1-3 days depending on square footage and size of the crew. Excellent. You have now paid (roughly) $4-$6/sf and you STILL need the floor installed. The cost of the product (we'll assume $5/sf) and the install ($2.50 - $3/sf is common for vinyl) adds another $7.50/sf. What is the SIZE of your project? How much carpet? How much tile? And what is your TOTAL budget once all the items are paid for and installed? Sometimes it is easier to start at the END and work backwards.

Bear claws here are also made with a sweet yeast dough, and they are fried.

I've included a link to a recipe that looks promising. I have not made this recipe, but thought it might be useful to you.

I love Bear Claws too but have only liked the ones with puff pastry. Otherwise it's just a doughnut but I don't know the texture differences between the various puff pastry recipes.
But puff pastry would be my first choice.

Here it depends on the bakery. My favorite small bakery makes them with nuts, a cinnamon/sugar/nut kind of filling and a white drizzle/glaze with slivered almonds for "claws" and they use more of a puff pastry dough, the same stuff they use in their fruit turnovers. The grocery store bear claws are, as far as I can tell, just yeast donut type dough. I like the puff pastry ones the best, but I've never made them.

I ought to give them a try, except I'm sure I'd like them and then I'd have to eat them all. Somehow I bet they wouldn't freeze well...

Of course I don't bake pastry, but I've bought quite a few for my family. As such, I've never seen a fried bear claw. My guess is a sweet yeast dough with a bit of almond paste and thinly sliced baked almonds on top. Puff pastry dough might work too, although they're usually not light as I imagine puff pastry to be.

Thanks for all suggestions...

First I have made AnnT's Cream Cheese Danish pastry.... refriged overnite and this afternoon made 4 "Bear Claws"
Had no almond paste, used a cinnamon, coconut, pecan combination. They were not picture pretty but did taste excellent.

After going to town tomorrow will mix up CLBlakey's reference to Gwens's Kitchen Creation of Bear Claws.

Teresa your link to a recipe is very much like CLBlakey's Bear Claw link. I am sure I am not looking for a fried donut type. I remember the dough as being flakey.

Husband said todays result was very close. I will keep working on this and will post results and pics later.

I loved the bear claws from a neighborhood Jewish bakery in North Hollywood, CA. A couple of years ago I bought a bakery cookbook titled, "Inside the Jewish Bakery." It's got a recipe for Bear Claws, and someone from The Fresh Loaf wrote about it. I've got the book, so if you're interested, I could type the recipe for you.
