lou's pizza dough question

I did a search and found lots of posts, but I think I found two different recipes. One was 3 c. plain flour, 1 c whole wheat flour, 1 tsp salt, 1 package yeast, 1/2 c. warm water, 1 Tbsp sugar, 1/4 c. oil and 1 c. warm water.

The other was 3 c. flour, 1/2 c. whole wheat flour, 1 c. warm water, 1 package yeast, 2 tsp. sugar, 1/4 c. oil and 1/2 tsp salt.

I can make biscuits very well but don't have much experience using yeast. I found some other pizza dough recipes but they called for a mixer or bread machine and I don't have one. I need something that's easy. I'd also like to know if the crust should be prebaked before adding toppings and cheese, or are the toppings added before it goes in the oven?
