Questions about poultry skin

I usually only buy skinless/boneless chicken and only deal with turkey skin. Do you eat it? With the turkey we just did not the wood pellet grill, we all did taste some of it. When actually eating dinner it was removed.

Since the spices are on the skin and it gets removed and not eaten, is there any point to the spices?

Are we missing out on something by ditching the skin?
