Ensure ice cream

A family member has had health issues lately and his doctors have recommended Ensure. But if you have ever tried it, (and I did, out of solidarity), you might find as we did, that it is dreadful. Even more so, if you are under 85 years old. However, I did find a recipe for Ensure ice cream that is pretty good. My family member said it is a huge improvement. So, here it is for those of you who know someone who drinks Ensure by necessity and not choice:

Ensure Ice Cream

Ingredients:

1 envelope unflavored gelatin

2 Tbsp cold water

3 Tbsp sugar

2 Tbsp light corn syrup

1Â½ cups of any flavor Ensure

3 Tbsp vegetable oil

1 tsp vanilla extract

1) Soften gelatin in cold water.

2) Add sugar and corn syrup. Heat slowly to dissolve sugar and gelatin.

3) Combine Ensure, oil and gelatin-sugar mixture. Mix well and pour into blender. Blender capacity should be at least 5 cups. Blend for a few minutes on high.

4) Add vanilla extract, if desired, and mix well. Or add fruit to the blender at this point. Blend well.

5) Pour blended mix into an 8x8 square pan (or individual dishes. Freeze until very firm.

Make three Â½ cup servings.

Calories 120

Protein 2 g

Carbohydrate 15 g

Fat 6 g

Sodium 40 g

Potassium 60 g

You sprinkle the gelatin over the cold water and let it stand for a few minutes to absorb all the water before proceeding to the next step.

What a great idea! You should post this over on the Care Givers Forum. Some of the members there might find it very useful.

I've never tasted Ensure, but my mom's doctor wanted her to use it for a while. She never liked milk, malts, or shakes, so drinking Ensure was a problem. She didn't like it at all.

I know that elders usually still enjoy sweets, so making ice cream out of a medical necessity is a wonderful idea.

DHs 93 yo grandfather has been told to drink this stuff and as you mentioned, he hates it. He does have a fierce sweet toothe though, so I am sending it along to MIL to see if she can get someone to make it for him.

Jo, thanks for posting. I agree with Jkom that there might be better tasting liquid drinks out there. But the concept remains the same. And I imagine that sometimes having the mouth feel of more solid food might be a great benefit for our elderly loved ones. I know my mom did not care for shakes, malts, and liquidy things. But she still enjoyed ice cream to the end. She was in a memory care unit and knew that Ensure was for sick people. But ice cream, on the other hand, was for everybody!

"kframe - By my calculations you need about 2.25 cups of HC to make 1.5 quarts of ice cream." Yes, it's generally more expensive to make your own ice cream. But have I said, anywhere, that the overall cost is what I object to? No. And besides, NO ONE makes my signature flavor of ice cream... cinnamon nutmeg. "To reiterate the point that I cannot seem to get through:... ice cream is a luxury." So what? The status of an item in a family's grocery order is NOT the issue. The issue is how the company is conducting its purchasing interaction with the consumer -- above board, or underhanded and sneaky. I know you've been tossing out the fact that ice cream is a "luxury" item. I've not addressed it because it's not germane for the reason I've stated above. The milk comparison is even less valid as I'll got months without purchasing milk. To me, milk isn't even a necessity, but again, its importance on my overall shopping list isn't the issue.

I have been making this one taught to me by a friendm but I use a ice cream maker. To me its more like ice milk. Simple and good 1 can 14oz condensed milk 1/2 gal (maybe a touch more) whole milk 1/4 cup to 1/2cup sugar-depending on your taste 1 1/2 tbs van. extract Hope this helps

You know, Carnation makes an Instant Breakfast that provides pretty much the same nutrition and it is actually drinkable and it's cheaper. When I was a home health nurse I recommended it to my patients because they couldn't afford Ensure.

I had to drink ensure for a while. I liked the chocolate one the best.

Obviously this is an old post, but I'm recently in a position where Ensure is a necessity for me & I'm hoping someone can help me with this Recipe . I'm allergic to Dairy so I'm using the new Plant based Ensure. I want to try this recipe, but I'm confused about the directions. It says to soften the Gelatin with cold water. Am I supposed to make the Gelatin like Jell-O and let that set in the fridge before continuing? Or, just mix the packet with 2 Tbsps. cold water & 3 Tbsps. of sugar, then continue? Also what does Â mean? About? Approximately? I'm confused. Any assistance greatly appreciated! Also Ensure is GREAT on cereal instead of milk.

I read it as the latter. Add the gelatin to the water, then add sugars and warm to dissolve. Looks like a really small quantity of liquid so be careful heating.

Don’t worry about the A. Old recipes got garbled up with a program change here. Actually lucky it came out readable. It’s 1.5 cups.

Good luck and please report back - might try this for my dad.

Just to say, Ensure is the foulest tasting stuff I have ever tried. EVER. I was given it in the hospital a few years ago, in liquid and 'pudding" form, and it is god awful. Glucerna, OTOH, is palatable.

The A is a goofy formatting thing...just ignore it. Like foodonastump wrote, it happens sometimes when old posts are brought up again.

No personal experience with Ensure, but my 93 year old father despises the food he is offered in his long term care home. To be fair, he has always been a picky eater. We have discovered that he really likes the chocolate Boost. Says it tastes just like rich chocolate milk.

Boost is excellent, although it is dairy-based. Note that they DO remove the lactose, so if you are only lactose-intolerant (vs allergic to any dairy) I would recommend trying it.

It is much, much better than Ensure! All of these nutritional shakes come in various types: high protein, low-sugar, Plus (high calorie), etc.

I was coming to add a comment about Boost. Mom found it much more palatable than Ensure. We found that adding ice cream and putting it in a blender to make a milk shake was even better.

There are other protein drinks similar to Ensure that taste a lot better. I mostly drink PureProtein, but I also like Owyn Protein Shake but it is a bit more expensive. They have a coffee flavored drink that is especially good, but it has a fair amount of caffeine in it.

IMO you should not be adding sugar and especially not corn syrup to protein drinks. I have occasionally added coffee liqueur or Frangelico to mine, but in very small quantities.

If I were going to make ice cream out of it, I would mix it in a blender with a banana, some yogurt, and some Splenda for sweetener. Or I might mix it with coconut milk. I have an ice cream machine with a compressor, and so I am make ice cream at any time on demand, although I really do not use it that much any more.

My mom lives on the Costco version of Ensure. I’ve never tried it. She needs the calories, I don’t.
