My cherry tree is loaded this year. I was looking at some recipes and one called for two pounds of cherries. How many cups would that be?

Well...I really believe that "a pint's a pound, the world around"....and I would use closer to 3 1/2 cups of pitted cherries to equal 2 pounds of unpitted cherries.
If you are measuring whole unpitted cherries, I would guess that 2 pounds is closer to 5 cups than 3 cups.
Come to my house....I'll put it on my scale.

Hi Konrad - thank's for the reply. I was thinking about having half of the tree be a mix of Pin Cherry and sweet cherry (Rainer, Lapins, Mont., Lapins) limbs. I wonder if the sweet cherry limbs will bare a lot of full-sized fruit. I have a native edible landscaping situation worked out in my yard - so I'd have the side with the sweet cherry limbs face my cultivated garden so that I don't see them when I'm in the middle of the yard (native persimmons, pawpaws, juneberries, the cane berries, plums, etc.) I want to make the Pin Cherry into a 15' wide colony, in a naturalistic effect. Maybe that's too little space and I'll just grow one and cut it down when it gets wider then 15' and replace it with one of it's clone suckers.

Sour cherry trees can pollinate sweet cherry trees. I'm not sure if they make the best pollinator, but they are certainly capable of doing so. If you take a cherry that resulted from a blossom that was cross-pollinated here and take out the seed, that seed can grow into a hybrid tree, which can eventually produce fruit of its own (I know that in the case of the hybrid cultivar 'Mesabi' it's even self-fertile). However, the seeds inside this fruit are sterile and cannot grow. Like breeding a horse and donkey together to create a mule, there is no third generation. The reason is a chromosomal difference, sweet cherries are diploid (2n=16) while sour cherries are tetraploid (2n=32). A hybrid between the two results in a triploid cherry, which is why it cannot further sexually reproduce. However, flowering cherry species just happen to have the same chromosome count as Prunus Avium (i.e. sweet cherries), so that means they are capable of freely interbreeding. But it should be noted the two are still not in the same species. The question then is what does this really mean? Even when it comes to the different wild varieties of Japanese flowering cherry, oftentimes crossbreeding them together results in a hybrid that grows less vigorously than its parents, or is not very well adapted to its environment. Sometimes this may become more evident several generations down the line (you might read up more on how Outbreeding Depression works). Cultivated varieties of flowering cherry, almost all of which resulted from hybridization over hundreds of years) are much less hardy than their original wild pure-species relatives. We can even see some level of graft incompatibility combining different varieties of cherries within the same species, the tree does not grow quite as vigorously or as big as if it were grafted onto its own rootstock.

Cooks Illustrated did its normal iterative testing review of ingredients and recommends the Trader Joes Morello cherries that Toby mentions. They found that the trouble with many recipes was that the cherry flavor was lacking because the fruit was overcooked. Cooked once before canning, then a second time with a long interval in the oven, were the culprits. Its recipe involves separately baking a type of sweetened flour-biscuit concoction made with buttermilk as the first step. Another step is to drain the cherries from the liquid and reduce the liquid with wine and afterwards add a small bit of almond extract. Then it all gets assembled in a pan for a 10 minutes warm up, with the cherries and reduced liquid on the bottom and the biscuits on top. I haven't tried it but it sounds not too complicated with a good result.

I have a friend with a prolific cherry tree. She pits the cherries adds the sugar and flour and fills a pyrex pie plate, covers and freezes. When frozen solid, removes the cherry "disc" and wraps well and stores in the freezer.
Then in mic winter, she makes a crust, puts the frozen cherries in the crust and bakes really hot....covers the top with foil partly through.
yes the crust does get a little soggy....but I'll take that home made cherry pie any day!!

What else are you going to make with the cherries? My trees are also loaded this year. They are several weeks from picking yet so have a little time to make a plan.

What kind of cherry tree do you have? My father could not get cherries to grow and make cherries where he lives in Texas, and he said he was too far south. I guess you must be in north Texas.

Do you preserve many of your cherries for use in future pies?

Patty, I made four recipes of cherry pie filling yesterday and froze them, today I am making two batches of cherry jam. Both are recipes in the Ball Blue Book.

Lars, I am in the Texas panhandle. I have an older sweet cherry tree and a dwarf sour cherry tree and it is the one that is loaded. Both trees were loaded, but we had a bad hail about a month ago that took care of the sweet cherries. The sour cherry tree is between buildings and more protected.
