Potato salad in aluminum pan?

I am making potato salad for a graduation party tomorrow, I used 10 lbs. of potatoes and don't have a bowl(s) big enough so I went and got 2 very deep aluminum toss away pans. Now my question, can I store the salad in these over night? Will it taste metallic?

Hi Di!

I have no basis in fact for my opinion so will not be suprised if others disagree.

I would not store potato salad in a metallic pan overnight although I have no issue with serving it that way.

If it were me I would mix it and store in large plastic storage bags and refrigerate. Then turn into the foil pans when ready to serve.

As an aside, when I am making a large potato salad for the next day I under dress it and then add the rest of the dressing just before serving. Otherwise the potaoes seem to "suck up" all the dressing.

I make potato salad all the time, just not this much! It's for my best friend's DD party. I didn't even think about it when I bought the pans, but I am so glad I asked! The bags are a great idea, and I will use the aluminum for serving.

Re-dressing is something I may try. Does it make the salad mushy?! I mean like break up the pieces of potato? The reason I ask is because I have had potato salad that was just basically mashed potatoes with all the other stuff, and I didn't like it as well.

I love this recipe - it's a bit of work, but if you are not a big fan of store bought mayonnaise and you do like something different, try this. It is spectacular! Old Fashioned Potato Salad: 3 lbs (10) unpared, medium potatoes, well scrubbed 1 1/2 tsp salt Boiling Water Cook Potatoes until fork tender, not mushy. Slice (with peel on). Marinade: 1 1/2 tsp salt 1 tsp dry mustard 1/8 tsp pepper Dash Cayenne 1/4 cup cider vinegar 1/2 cup salad oil 1/2 cup green onion chopped. Pour marinade over still-warm, cooked potatoes. Toss gently to coast well, refrigerate covered at least 2 hours. Boiled Dressing: 1 tbsp flour 2 tbsp sugar 1 tsp salt 1 1/4 cups milk 3 egg yolks slightly beaten 1/4 cup cider vinegar 1 tbsp prepared mustard 2 tbsp butter Stir flour with sugar and salt. With wire whisk, gradually stir in milk. Cook, stirring over medium heat until mixture starts to boil. Boil 1 minute, remove from heat. Gradually stir the hot mixture, a little at a time into the beaten egg yolks. Pour back into saucepan. Add vinegar & mustard. Cook, stirring constantly until mixture starts to boil. Remove from heat and stir in butter. Cool, then refrigerate. One hour before serving, add celery, radish, hard-cooked eggs and dressing to potatoes. Refrigerate until serving time. Bon Appetit!

FWIW, the original post is 13 years old. 2008. But the watery issue seems to be a problem for some. I agree it might be the miracle whip breaking down. I packed up some lunches this morning and the potato salad i made Saturday was like glue. Very creamy loaded with vegetables---celery, green onion, red pepper, etc. I used both russet, cut into quarters, and small waxy white creamers, cut in half, before boiling. Cut probably releases alot more steam when cooling. I cut further when cool enough to handle. The russets crumble a bit making a starchy 'gravy'. Probably helps that i use mustard and horseradish powder in my dressing. As well as Korean chili flake. Cucumber will definitely release water overnight. I like to add cucumber but to the table and not fully incorporated. You could probably save a watery salad by draining the puddle and adding dry mustard powder. It will not only add flavor but it is a water absorber. Also, make sure your potatoes are fully cooked. When pierced easily with a fork, give them just a few more minutes. Slightly undercooked potatoes are bland. They will not absorb the dressing as well as slightly overcooked.

This is slightly different each time because depending on the number of people the amounts changes a bit...The recipe is my mother's but with her blessing she approves of the addition of the shrimp. 1. red or white potates about 2-3 pounds. Scrub skins and put in 3 quart pan. Fill pan halfway water and add 2 tsp of salt. Boil until just tender.(do not over-cook) cool then peel if you wish, then cube (medium) the potatoes and put in a very large mixing bowl or 5 quart pan works great for mixing. 2. Chop 5 ribs of celery and add to potatoes. 3. Chop 1 large dill pickle and add. 4. Add 8 chopped hard boiled eggs. 5. Add 1/3 cup of finely chopped sweet onion or more/less to taste. 6. Add 2 small cans of med shrimp drained (this is optional), but if you like shrimp and potato salad you will love the flavors when combined. 7. Lightly toss all of the above. 8. Add 1-2 cups of mayonaise or half mayonaise/half Miracle whip. This is a tastes isssue...I prefer to use Hellman's (Best Foods) mayo only but add mustard 1-2 Tablespoons. 9. With the above add salt and pepper to taste as you mix, using a clean tasting spoon each time. 9. Mix together lightly but thoroughly. Add more mayo if needed. Put in bowl and slice two hard boiled eggs to decorate. Sprinkle paprika on top. Cover tightly and refrigerate until ready to serve. Enjoy!

I know it’s no longer in vogue, But I like a good old-fashioned mayonaise potato salad with egg. I boil the potatoes usually peeled maybe not until just barely tender so there’s still a bit of a bite to them but not raw. When the cubed potatoes are still warm I like to toss them with a bit of Italian salad dressing . Then I make a dressing with mayonnaise and yellow mustard celery salt and pepper and thin it with some dill pickle juice. Then I add celery, green onion and either chopped dill pickle or sliced green or black olives. Chopped hard boiled eggs and the mixture is mixed together. The consistency of the mayo thinned with the pickle juice makes it moist but not soupy. We love it, but don’t have it often.

Not sure what type of dressing you use but I find that the potatoes tend to absorb a lot of the dressing when it's kept overnight. To offset that, I toss the salad , just before serving, with a bit more dressing that I have thinned out with a bit of a vinegar/mayo mix.

In case you need another opinion, I agree with Sharon/Chase. I don't store acedic things in aluminum for any length of time
The potato salad will only be mushy if you over cooked your potatoes. I don't "under dress" my salad....I like the potatoes to absorb the dressing....but I always have extra dressing to add the next day.

Im always making this for friends and family parties and I always make it in aluminum trays unless its for my own home,,,never had a problem and I always make it a day ahead.

I've never stored food in those aluminum pans because I've never had refrigerator room to fit one in, LOL.

I store things as Chase suggested, in plastic bags, because they store more easily and take us so much less room.

I also make extra dressing to add to potato salad the next day, because my family likes lots of dressing.

Your potato salad looks delicious!
In the past when I have made potato salad for a large group I made it the day before and stored it in aluminum pans in the refrigerator and never thought a thing about it. It tasted fine.

A few years ago I started baking my potatoes for salad instead of boiling. The potato salad keeps better and doesn't get "watery." We like our potato salad chunky and the potatoes hold their shape better.

Chase, I enjoyed keeping up with your road trip also. I know you had alot of fun!

I have no real reason for this but I do not like to store things in aluminum pans especially anything with that might be acidic.
