Bread for meatloaf dense or light?

I have some bread to use it or loose it. I made croutons out of some of the sourdough cheese bread still have some it was a big loaf. I keep it in the freezer as one person I don't use a lot. Bread only last a few weeks then it starts to dry out. I have a few kinds to chose from, sourdough, ciabatta, focaccia, and some cheap sandwich bread. So what do think would be best? A few years ago I had breakfast at a Czech restaurant. They had a bread dumpling that was sliced and fried. I have tried to make these but they fall apart for me so no success yet. If anyone has made these can you give me some tips. Thanks Patty
