Does anyone have a great T&T Brioche recipe?

I have never made brioche and am looking for a great recipe. Can you help?

Alexa, I'm not sure this is the recipe I used and you didn't specify loaf or rolls but you could hardly go wrong with an Ina Garten recipe.

Mini Brioche Rolls

Total Time: 12 hr 5 min.
Prep40 min.
Inactive11 hr 5 min.
Cook20 min.
Yield:20 rolls

Ingredients:

1/2 cup warm water (110 to 120 degrees F)
1 package dried yeast
3 tablespoons sugar
6 extra-large eggs, at room temperature
4 1/2 cups unbleached flour
2 1/2 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1 egg mixed with 1 tablespoon milk, for egg wash

Directions:

Combine the water, yeast, and sugar in the bowl of an electric mixer fitted with the paddle attachment. (If the bowl is cold, start with warmer water so it's at least 110 degrees when you add the yeast.) Mix with your hands and allow to stand for 5 minutes until the yeast and sugar dissolve.
Add the eggs and beat on medium speed for 1 minute, until well mixed. With the mixer on low speed, add 2 cups of the flour and the salt and mix for 5 minutes. With the mixer still on low, add 2 1/4 more cups of flour and mix for 5 more minutes. Scrape the dough into a large buttered bowl and cover with plastic wrap. Refrigerate overnight.

The next day, allow the dough to sit at room temperature for 1 hour. Meanwhile, grease 20 mini brioche tins. Set aside.

Place the dough in the bowl of an electric mixer fitted with the dough hook, add the softened butter in chunks, and mix for 2 minutes, adding additional flour as needed to make a ball. Turn the dough onto a lightly floured board and divide the dough into 20 (1 3/4-ounce) balls and place them in the tins. Cover the tins with a damp towel and set aside to rise at room temperature until doubled in volume, about 2 hours.
Preheat the oven to 350 degrees F. When the rolls have risen, brush the top of each with the egg wash and bake for 20 minutes, or until the tops spring back and it sounds slightly hollow when tapped. Turn the rolls out onto a wire rack to cool.

I like this traditional recipe.
10ml cream
350g flour
3 beaten eggs
1 soup spoon orange flower water
10g fresh yeast
1/2 coffee spoon salt
50g sugar
120g butter
Zest of an orange,.

In a bread machine, put the eggs and liquids, then the flour and the chopped butter. Add the salt, sugar and yeast.

Tova, here's the recipe I used for the toner, from Rodale's Illustrated Encyclopedia of Herbs. "Start with either apple cider vinegar or white wine vinegar. Add 1 cup of petals or leaves for each pint of vinegar and place on a sunny windowsill in a tightly sealed glass bottle. let the mixture steep for two or three weeks, shaking it vigorously every day. Strain and rebottle. If you like a more diluted lotion, add water." Naturally, you will want the plants you use to be clean and free of any pesticide. Make sure your containers are sterilized, like you do for canning or making jam. I used the lemon balm because it's supposed to be good for wrinkles, and calenula is good for oily skin, and is a soothing and healing herb. Here's a recipe which I have worked up for my dehydrator; it makes terrific jerky. Please note that it is used to dry and flavor the beef, and it is NOT cured; that is, I don't know if it will be safe to store this stuff at room temperature or not. I keep the product in the freezer anyway. I've never used an oven to dry the stuff, although I suppose you could if it came down to a low temp. At any rate, this recipe is a good starting point: Guinness Beef Jerky Marinade (This amount of marinade is sufficient for about 5 to 6 pounds of beef, which I find fill my eight dehydrator trays fairly full.) 6 lbs lean beef, sliced thinly--see Note 1 2 bottles (12-14 oz each) Guinness Stout 2 tablespoons kosher salt 2 tablespoons garlic powder 2-4 tablespoons hot stuff (see Notes 2 and 3) optional: liquid smoke, 1 to 2 tbsp In a large bowl pour stout and add salt, whisking to dissolve salt and decarbonate the stout. Add the garlic powder and hot stuff and mix well. Put the beef strips in the marinade by handfuls, swirling around to make sure all surfaces have come in contact with the marinade. Place the beef in a nonreactive container (a stainless stockpot works fine, pour the remaining marinade over the beef and refrigerate for at least an hour (more is better, mixing the beef strips every so often in the pot) Place the strips flat on the trays and dry until done. Note 1: I like to use round roast because it's very lean; eye of round is very easy to slice across the grain, and that yields a less stringy product. Don't use a fatty cut because it won't dry as thoroughly and won't have the storage properties of a leaner cut. Note 2: I have used chipotle powder with good results; 4 tablespoons in this recipe makes a quite hot product, and 2 tbsp makes a pleasantly zingy one. If you want something quite mild, use sweet paprika which would make a product not at all hot but with pleasant flavor. Note 3: The last batch I made, I used a can of chipotle peppers in adobo sauce instead of the tablespoons of hot stuff, blended in the blender until smooth, then I added the other ingredients and blended until mixed. Worked great, although next time I will cut back a little on the salt. I prefer to dry it fairly dry and store it in several small (1 qt) ziploc bags in the freezer, transferring one bag at a time to the fridge from which I take a piece or two at a time to snack on. None of it has ever gone bad storing it that way.

Home Cookin 4.9 Chapter: Recipes From Thibeault's Table ================== Source: Southwest Cookbook Vegetable oil for frying 12 corn tortillas (6 inches) 1 1/2 cups (12 fl ounces) chileen Chili Sauce (recipe on page 195) 2 cups (8 ounces) grated Monterey Jack or Cheddar Cheese 3/4 cups finely chopped onion Preheat oven to 350Â°F. Pour vegetable oil into a medium , heavy skilled to depth of 1/2 inch. Heat the oil over medium high heat to 375Â°F, or until a strip of tortilla browns in 60 seconds. Soften the tortillas, one at a time, for about 5 seconds per side in the hot oil and drain on paper towels. Heat the green chili sauce in a shallow pan and dip each softened tortilla into the sauce. Place 1 coated tortilla on an oven proof plate and top with 1 tablespoons green cili sauce, 2 tablespoons grated cheese and 1 tablespoon chopped onion; repeat twice so that 1 serving contains 3 layered tortillas. Repeat with the remaining ingredients to make 4 tortilla stacks. Bake the stacks for 3 to 5 minutes, or until the cheese melts. NOTE: Add cooked chicken and or pinto or black beans between layers. Green Chili Sauce 1 Jalapeno chili seeded and diced 1 garlic clove crushed 1/4 cup chopped green onions 4 tomatillos, husked and diced (or use canned) 1 1/2 cups chicken stock 2 new Mexico green or Anaheim chilies, roasted, peeled, cored, seeded and diced. 1/4 cup chopped fresh cilantro 1 tablespoon fresh lime juice 1 tablespoon heavy cream salt and freshly ground pepper to taste In a medium saucepan, place the jalapeno , garlic, green onions, tomatillos and chicken stock. Bring to a boil over medium-high heat' reduce heat and simmer until theliquid is reduced to about 1 cup about 15 to 20 minutes. Pour the chicken stock misture into a blender or food processor. What is the ingredient list on the purchased box? (or is it a box). I'm not familiar with Marie. One odd thing i noticed is 5 dollops of whipped topping on the pie. Is that not hard to cut evenly? We don't have pie much and an inch slice is about our limit and only holiday time anywho...(can't cut across that first cut) It is standard practise with larger companies to use the actual product advertised and on the box photo...and in tv commercials. It is the law and any cheats would be so easily leaked by those working on the project. Styled food 'photos' do cheat sometimes in later touch-up but the original set-up is the actual food product. Hours with tweezers. I worked on so many years ago to fill in down time and then again during the writers strike for a short time. I'd rather stick pins in my eyes it is so boring. Smaller companies and most import products are not regulated at all. Why what you see on some package/can/jars is nothing like inside and why it is often impossible to re-create something after looking at the ingredient list with all the preservatives tweaks in a laboratory. One commercial for a checkerboard ice-cream that served up perfect slices had a half dozen chest freezers brought in with the actual boxes from the factory that one would buy in your local grocery. They sliced and sliced for three days to get the perfect one over and over. On a PizzaHut commercial they tractor trailered in the ovens used in their 'establishments', (fast food joints) lol. And large boxes of chilled bags of goop sauce with a dozen in-house cooks to prepare it just the way it is done by the food staff on site in your neighborhood. I think it was for their pasta offerings, not pizza. Besides all that, trying to re-create a good flavor combination at home with fresh ingredients is noble and i think important. Less processed and maybe not so pretty but much healthier. (really who cares with dessert) Actually with trial and error a pretty slice can happen...not likely in my house as some are often perfect and others are goopy but still taste good. A warm knife run under the sink then whipped dry helps with slicing cold pie. The entire history of food advertising and when the ball dropped is interesting. like GainsBurgers for dogs. Basically play-dough with zero food value and considered a real treat!

I agree with Jude31 -- when I've made it, I've used Ina Garten's recipe. Mine turned out great. I even bought the little brioche tins for it!

I like the subtle hint of orange in a brioche. It smells wonderful when toasted for breakfast.
