What to serve with Spanish Rice?

I am making Spanish Rice, the type with hamburger in it. What should I serve with it? I am coming up blank.

My first thought is to have corn and/or green beans, that's been my standby all my life. Add to that a tossed salad, roll and dessert that is a chocolate something and you're talking a favorite comfort meal for me.

Cornbread. I havn't found a recipie I like, I use Betty Crockers mix. Cook in a cast iron pan if you have one.

Tossed green salad and a loaf of crusty French bread....of corn bread with corn.

1/2 stick butter
8 oz. sour cream
8 oz. cream-style corn
2 tsp. sugar
2 beaten eggs
1 cup self-rising cornmeal (do not use cornbread mix)
Melt butter in iron skillet. Mix sour cream, corn, sugar, eggs and cornmeal. Pour into hot skillet. Bake at 400 degrees for 20-25 minutes.

Stuff it in some bell peppers or tomatoes. Yum.

I bet you've done something with it by now, but I did have another thought if someone rambles by this thread, stuff it into a zucchini. Although, I originally thought it was meatless and I was going to suggest bar-b-q chicken. We found out the other night, that's a really good combination, quite tasty.
