I am not sure where you live. You can get live conch in a Chinese store.

Also, canned conch is very good. Try Amazon.com if you cannot find them in stores near you.

I have also seen frozen conch at the Asian markets where I shop, both the one in Ann Arbor and the one in Grand Rapids. If I can get it in Michigan, you can probably get it at Asian markets elsewhere, it would be my first try anyway.

Could someone more knowledgable than I am with canning explain "raw" canned conch?

FOAS, i am not sure about canned raw conch.

I thought Caminnc meant frozen raw conch. That I know you can buy on-line.

FOAS, I'm confused too, if it's canned, it has to be cooked, as far as I know, as seafood requires pressure canning.

OK, I guess it probably is all cooked if it's in a can. One brand says cooked and the other brands says nothing. I know some people cook raw conch before making fritters and some people put it through a meat grinder BUT I am sure that is fresh conch. Some of the canned conch also states that is perfect for conch fritters but I don't think it has directions or a recipe. So many questions. We do have a restaurant that has conch fritters but I would love to learn to make them.
