I decided to start a new thread. Who knows what can happen to the other one.

Basically the video shows the purpose for me to share this simple BBQ technique with you, and thing got very strange.

1. Using an adjustable speed blower to get the fire going full blast in a few seconds for high temperature searing of the meat. This is not to teach any one on how to start a charcoal fire.

It happens that the video also shows very well how sous vide cooking can give you very tender and juicy texture of the meat.

I also find it interesting that many of so the called BBQ pulled pork recipes are not BBQ. They are pulled pork with BBQ sauce or roasted pulled pork. BBQed pulled pork is very nice.
