Cookie question for the bakers

We have an oatmeal coconut cookie that we buy from a local bakery. I happened upon the recipe in a cookbook and have been making these, but need to change something. The recipe calls for both brown sugar and white sugar, but mine seems to be a darker cookie than the one from the bakery, but tastes the same. I like the appearance of the lighter cookie (bakery). Can I change to all white sugar without changing the texture/flavor or messing it up somehow?
It also calls for butter or margarine. I have been using butter. Would that cause the color difference?
