Quantity help for a dinner

I'm in charge of a lunch Sunday for about 40 people. The menu is grilled chicken, green beans(fresh with ham hocks), baked potatoes, sliced tomatoes, biscuits, desserts.

I"m wondering how much sour cream and butter I should get.
The potato will go on the plate but the diner will top it themselves with butter, sour cream and cheese as wanted.

Butter will be on the buffet table for the biscuits too.

Will 2 pounds of butter be enough? 2 big cartons of sour cream?
How many biscuits? I am getting Mary B's or Pillsbury, will shop later today. I'm thinking 60 biscuits?
