What's a girl to do who both loves to bake and is trying to be somewhat health conscious? Start experimenting with different whole grain flours! I now have in my possesion white wheat, whole wheat pastry, barley, oat, and upon the advice of grainlady, spelt flour. So far, I really like the spelt flour. It doesn't have that bitter taste that I find with whole wheat. The oat and barley flour have done well in pancakes. I tried to make popovers the other day with whole wheat pastry flour and they were as heavy as lead! No popping at all. Here are some brownies I made today with spelt flour. I am under no illusions that these brownies are now health food as they still contain copious amounts of butter and sugar, but hey, it's a start :)BTW, the kids loved them. The true test!

Anyone else been experimenting with different grains?
