Hurry Up! Plantaginea Is Ready!

I posted this in another thread. Stir fried hosta. IMHO, much better tasting than spinach.

I have been enjoying hosta in many styles everyday the past few days.

Just want everyone to hurry up to harvest the young shoots and leaves before they become fibrous and tough.

I have also blanched lots of surplus and froze them. Hosta freezes very well.
