So you eat sorrel?

(Edit: the title was supposed to say Do you eat sorrel? but there is no edit to correct that..)

On a whim, I planted some sorrel when putting in cool weather plants because it is something I hadn't had before. Now it's ready to pick.

When I started looking for recipes, I found that it gets its tart flavor from oxilic acid. That's what makes rhubarb leaves toxic but it's in a lot of plants at lower concentration. Sorrel has a higher amount then things like parley but its supposed to be safe in reasonable amounts. But some sites say it can make arthritis worse (and I'm starting to have a bit of that in my knee). There are also warnings for those with kidney problems.

So do you eat sorrel? Are you concerned about it? Is it okay to make a sorrel soup with it or put some in a salad? If you have arthritis, have you noticed sorrel making it worse? I kind of want to try it but I've just gotten the knee back under control.
