I'm in charge of providing an evening meal for a Non-Profit Association Board Meeting. There will be 14 in attendance, 13 men.

Constraints are:
No Ham
No Chili or spicy
No kitchen facilities
I have to travel 1.5 hours to location

Any ideas what I can cook or am I stuck ordering pizza?

Do you want something easy and simple (like a one-pot meal)? Do you have access to a couple crockpots? Does it need to be REALLY home-made or can it be can/jar/frozen items combined to make a meal? What's your budget?

I have loads of suggestions but don't want to overload you with them without this info.... :)

Hi Bonnie,
I have crockpots and chafing dishes. Most of these guys do not get a home cooked meal often and they generously donate their time. Any ideas one or multi pot are welcomed. I was even thinking about buying several Sam's roast chickens and cutting them up and just doing side like mashed or scalloped potatoes and a vegetable or two and cookies for dessert.

Here's the feedback. The meal was a HUGE success. Appetizers: Jalapeno popper cheese, modified a bit cause I couldn't find canned diced jalapeno's so I used hot pickled ones. I made half the recipe, everyone had one or two crackers and a slice of bread and loved it. He brought the dip to the table and finished it all by himself. Main course: Salad with jicama, pear, mandarin oranges, avocado and baby bib and sweet lettuces. I made a quick vinaigrette that was delicious. Their kids ate bread while the adults and my kids had salad. Gumbo was delish!!! Everyone licked their bowls (figuratively of course) and went back for seconds. I made cspitells corn bread but baked it as muffins. Perfectly moist corn bread. I attribute that to fresh ground cornmeal which I ground from organic popcorn. I made 20 muffins. NONE left. He ate at least 6. Dessert: Chocolate chess pie. Well it was a good thing I made two even though I only did it because I misread the ingredients and put in a large can of evaporated milk instead of the 5oz called for. To correct that mistake I quickly doubled everything else, threw in an extra egg and grabbed another pastry shell out the freezer. They vanished. I mean he was sitting there licking crumbs off his fingers and the bottom of the pie plate :) I was exhausted by the time dinner was almost ready so didn't make the souffles. No-one except hubby missed them and he got them the next day :) The fruit salad went down well and was the only dish I had leftovers from. Everyone had a great time, tons of compliments on the food. For that reason alone, they can come back anytime :)

Sounds great! You seem to have "3" salads though, one meat, and one bread. I think a simple veggie (not a fruit salad or another salad type) but just one very simple vegetable offering may help round out the meal. (Maybe some green beans) You "could" cut out the Caprese (tomato) salad if you wanted to get rid of something. It's often served instead of a green salad. Although, you may try to serve it as a veggie side, it probably won't work because a tomato is really a fruit and can't usually pull off being a real veggie side because of that. If you want to try to stay away form adding a veggie, you could serve the chicken breats in a green type of salad or even in a pasta salad...making it more of a meal..and you could add a soup... But if the meat is served by itself as you have it, you should have a side veggie, probably something green or mixed.

This is my twisted version of Tlalpeno Soup. Traditionally it has chipotle peppers in adobo but I don't like them. I tend not to use recipes so this is a "loose" recipe intended for those comfortable with seasoning to taste. It is very adaptable to your own preferences and what you have on hand. Like I said previously, I've dropped the chicken and upped the chickpeas.. I have also added brown rice. The one thing I wouldn't eliminate is the cilantro. I know many people don't care for cilantro but it really makes this particular soup. Ingredients: 1 small onion diced 1 stalk celery diced 1-2 jalapeno, diced 1 roasted poblano pepper, skin removed 1 chicken breast (1 large breast) 6 cups chicken broth (I sometimes swap a cup of tomato juice for a cup of broth) 1 can petite diced tomatoes with chilies (or use fresh italian tomatoes) 1 cup chickpeas 1 c fresh cilantro chopped Add seasonings to taste: oregano chile powder cumin cayenne pepper salt pepper garlic powder (if you prefer minced, add at the very end of the vegetable saute) Directions:1. Shred or dice the cooked chicken. Saute onion, celery, jalapenos in a small amount of olive oil until soft (about 3-5 min). Add chickpeas, tomatoes, chicken and broth. (it should be a fairly brothy soup at this point). Add 1/4 cup or so of the chopped cilantro and seasoning to taste. Be cautious with seasonings at this point-- the spiciness will intensify as it simmers. 5. Let simmer for 30-40 min. Taste again and add seasonings as required. 6. Add remaining cilantro and let simmer 5 min. 7. Serve in bowls and top with some, none or all of the following optional toppings: avocado, shredded cabbage, chopped radish, sour cream. Me? I like just a squeeze of lime.

Quick report. Meal was a big hit. But, after the day we'd had, so was bed. Ride started at Welches OR and ended at Government Camp OR, which is about 15 miles east along Hwy 26 if you are sensible, but instead we went in the other direction, north into the National Forest on logging roads, and proceeded to ride all the way around Mount Hood, a sort of clockwise circuit, and reach Government Camp from the opposite side. The 42 miles of twisting roads through the forest were gorgeous, with remarkable views, thankfully much shade, generally decent road surface, and we saw two cars in 8 hours. I enjoyed seeing Mount Hood from the back side, a view that not that many people see. But there was also no potable water, no cellphone coverage, several miles of gravel road, and what seemed like endless climbing. There were short steep descents but you couldn't really bomb down them, because the road did have the occasional monster hole or collapsed area, which might be hidden in a patch of deep shadow. And it was 102F up there, according to someone's fancy bike computer. I ran out of water about fifteen miles from the first civilization in Parkdale, got dehydrated, and despite drinking a ton of water and Gatorade at the little grocery store there, my thighs and calves started cramping up on the next stretch, which was a 10 mile climb to reach Hwy 35. I was in my very lowest gear, trying to turn the pedals with as little force as possible, feeling the muscles get tight. Sometimes I had charley horses that I had to pedal through. A couple times I had to get off the bike and sit down until my muscles stopped seizing up. We got to Hwy 35 with another 20 miles of climbing ahead. This is a pretty desolate two lane highway, with no cellphone coverage for most of the way and, on Saturday around 6 pm, maybe one car every 5 or 10 minutes. Several miles down the highway, one of our group had her rear tire blow out. Not the tube, but the tire casing itself. It had been sliced open on a gravel stretch, back in the forest. Our patch held for 50 miles but now the tire had a pencil sized hole worn in the casing, Mary Jean's bike was unrideable, and the sun was getting low. The other three rode ahead to find a cellphone signal and call AAA to retrieve her, and also call her husband to see if he was close enough to come get her. Rick had ferried our clothes and food to the condo that morning, then returned to Portland, due to return late that night. I stayed with Mary Jean, for entirely selfish motives - I figured that the AAA driver who picked her up would surely give me a ride too. With nothing to do, we tried patching the tire casing again, rode half a mile, blew out the re-patch, and started walking, wondering how many hours the others would have to ride to find cell coverage and how busy AAA was on a Saturday night and when the sun would set. It was getting dusk now. A pickup truck approached and slowed, the driver peered at us, and drove on. Several minutes later the truck returned from the other direction, and he was one of the local AAA drivers, off duty, looking for us on his way home. We arrived at the cabin right when our companions rode up. They had ridden to an area with a single cellphone "bar" about forty minutes after leaving us, spent another 15 minutes trying to explain the situation to AAA over a garbled connection, and the closest AAA truck on duty was busy in Sandy, over an hour away. We'd have been out there after dark. Our driver told us that the area where we had been walking was a sort of local Bermuda Triangle, populated with bear and cougar, where people disappeared mysteriously. Most recently, a father and his adult son, hiking, had never been seen again. The thing is, all the locals agree, a cougar wouldn't take on two adult men. So, as you can see, the dinner that night didn't have to be good to be good, if you see what I mean. But it was good too. No-one was awake enough for the swimming pool or hot tub. The next morning I left the others - they were staying in the condo all weekend - and rode the 15 miles down Hwy 26 to my car in Welches. That was a great descent, curvy two lane highway, all downhill, good pavement. Get in a low tuck and you can hit 60 mph on a road like that, in spots you can actually keep up with cars. I didn't, because I was carrying a bag of clothes over my shoulder. I was dehydrated for a day afterwards and my legs still feel heavy. I have a list of precautions to take if I ever ride in the backcountry again. And I made some new friends. So it was a nice day after all.

If you give me a few minutes to get the info together, I found a great source on Pinterest from a blog called Brandy (Brandi?) the Country Cook.ÃÂ She's kind of 'semi-homemade' cook, using jar sauces, frozen meatballs, can bisquits, box cake mixes, etc. along with 'real food' food like chicken, beef, etc. to make homemade meals (not the cake mixes....they're for desserts...lol).ÃÂ I got hooked on her during the holidays....lol.

Can I email you directly since I iwll be sending links to her site and GW may not like that since it's a blog.ÃÂ I don't know the community rules (and too lazy to go look...lol).

But she has lots of crockpot meals that sound delicious and I love the way she takes pics at each stage of the recipe.ÃÂ Very easy to follow.

As long as you're not adverse to everything not being truly 'homemade' (some folks are) then this might work.ÃÂ The men won't mind as long as it tastes good....lol.ÃÂ

I would suggest, if you decide to use any of hers, to read the comments below the recipe because sometimes you will find hints that others discovered (like, "I used 1/2 c less" or "I cooked on high and not low and it was still fine")...things like that.

Here's a link to her menu index. Scroll down and you'll see main dishes. Within there, she has some crockpot recipes. Then further down, she has a crockpot recipe section, too. You'll just have to explore because she has sooo many yummy things and it is a little mixed up (I think from when she expanded her recipes, she ended up creating more categories).

For example, one that I"ve wanted to try (but I'm single so haven't had the need to make a full crockpot) is chicken and tatertots. It has cheddar cheese, milk, and real bacon bits (omit if pork not allowed). So simple.

Another is chicken with Stovetop stuffing, using cream of chix soup and sour cream.

There are also pasta type dishes....ziti, lasagna, etc. There's something called Bubble Up Lasagna that I think she uses can bisquits. Also beef dishes. And some single meat dishes that you could make side dishes to go with (she also has recipes for that). I think she has a mac and cheese crockpot recipe.

I have to admit, I've only tried her desserts. All came out great. But from all the comments below each recipe, everyone seems to love her food.

Don't ask me why Chicken Vol au Vente comes to my mind but it did!

Actually I did make it for 12 judges at a gymnastics competition years ago...similar constraints...and it was a huge hit.

But the Vol au Vente puff pastries and cook them at home in advance. They can be room temp when served. If you don;t want to do the vol au vente shells then make or buy country biscuits.

Prepare the filling using a basic chicken stew type recipe., chicken, gravy, carrots, peas etc ..I have one if you want it .

Transport the chicken stew in a crock-pot, heat back up and serve over room temp pastry shells or split biscuits. Nice little side salad and I think they will be very happy.

Well, I'd like the recipe! I don't make things like that but I do think most men would like it.
My first thought was a hearty, meat sauce and with meatballs in a crock pot, penne pasta (easy to keep warm and to eat), salad, garlic bread and fruit cobblers (homemade-not canned fruit).
We have this all the time at our church which does not have a stove but we have tons of roasters so we adapt.

Moose, This is a pasta salad from Sheshebop that has served me (and my guests) well and it travels nicely. It feeds more that you need so I have included the 1/4 recipe.

SherryÃ¢ÂÂs Macaroni Salad for 70
4 lb. macaroni
1 bag frozen peas
1 bunch celery
3 cans black olives
2 large onions
8 cups sundried or roasted tomatoes
2 packages of carrot pennies
8 cups shredded cheddar
Dressing
2 qt mayo
8 oz. French dressing
1/4 cup vinegar
1/4 cup sugar
1-1/2 tsp onion salt
1-1/s tsp garlic salt
1 tsp salt and pepper
1 cup half and half

ÃÂ¼ Recipe
1 lb. macaroni
1/4 bag frozen peas
3 celery stocks
1 can black olives
1/2 large onions
2 cups sundried or roasted tomatoes
3 carrot pennies
2 cups shredded cheddar

ÃÂ¼ Recipe Dressing
16 oz mayo
2 oz. French dressing
2 tbs cup vinegar
2 tbs cup sugar
1/2 tsp onion salt

Your recipe sounds delicious. I'm so glad you posted it because I've been wanting a mac salad dressing that had some zing to it. I always find mac salads kinda bland. I know I can google it, but my tablet keeps crashing...so can you tell me what Pensey's Muril of Flavor is?? That's a new on me...lol.

Bonnie, I am so glad that you appreciate the recipe. I think you will, like me, find that it is a go-to dish for get-togethers of all sizes. Here is the description from Pensey's website:

Bonnie, This is a really good and much used recipe from Ginger on the Recipe Exchange thread. I have been making it for decades! It freezes well so can be made ahead and warmed up AND/OR made in a crockpot. A side of cole slaw or salad and a dessert and it's dinner!

CROCKPOT FRENCH DIP SANDWICHES

2 cups water
1/2 cup soy sauce
4 whole peppercorns
1 tsp dried rosemary
1 tsp dried thyme
1 bay leaf
1 tsp garlic powder (had none so used 1 minced garlic clove)
3 lb boneless beef chuck roast, trimmed
8 French or sourdough rolls, split

Combine water, soy sauce, peppercorns, rosemary, thyme & garlic in a slow cooker, stirring until well blended. Place roast in cooker & cover.

Cook on high for 5-6 hours or until beef is tender. Remove meat from broth & shred with a fork. Serve beef on rolls. Pour broth in small bowls for dipping.~~ Good topped with Swiss cheese or sauteed onions, peppers or both. I like mustard on the rolls, too.~~

Mustangs, I'm sure I will use it often !!ÃÂ I have a small family get-together coming up and I always do a mac salad.ÃÂ So I also appreciate the reduced portion recipe.ÃÂ That was real thoughtful of you !!ÃÂ

When I make any mac salad recipe, I tend to keep adding this and that, trying to get it to have more flavor, if you know what I mean. And I'm never really happy with it (altho everyone always says it's great.ÃÂ I don't CARE.ÃÂ I want to LIKE how it tastes...lol).
I bet the addition of the half and half is part of the secret.ÃÂ Instead of mayo, which I think just tends to cling to the outside of the pasta, it probably makes it creamier.ÃÂ And the French dressing.ÃÂ That's the 'zing' I was looking for.

And that spice blend....UMMMM !! I'm sure that also adds a LOT of flavor. Do you buy it at a store or from Amazon?

How about barbecued or smoked or braised brisket? Men love meat, and it's dead easy to cook. Just really low temperature, very slow, don't bug it and just let it cook. You can do it the day before and heat it on site. Brisket is good warm. It doesn't have to be piping hot. Or you can pull it and put it in sauce in the crockpot for sandwiches.

Serve with lots of crisp vegetables. Crudites or sandwich slices. Rustic bread or a pasta side. Great with broccoli too, or even better, broccolini. :)

Linda....that absolutely sounds yummy.ÃÂ That site I linked to also has something similiar that I thought about suggesting, as well as meatballs to make meatball subs.

That, and the side of the mac salad that Mustangs posted plus some dessert would make a great meal that any man would love......hahaha.

Boy, all this food talk is making me HUNGRY !!!ÃÂ If the OP doesn't come back (just kidding), we will have to swith this over to a recipe exchange post *grin*

Bottom round is on sale this week so I think I will do the French Dip Sandwiches with sides of macaroni/pasta salad (Can't wait to try the recipe mustang provided) and tossed salad and cookies for dessert.

My family is dying to try the chicken & tater tots in a crockpot recipe from the Country Cook website. Thank you for the link. It's on our menu for this weekend. I'll let you know how it comes out.

The Chicken and Stuffing casserole is a favorite, love it! You could use the chicken meat from Sam's roasted chickens to make it easy on you and add a vegetable, salad, rolls, and easy dessert, bars/cookies or cobbler.

Wrapping a hot casserole in foil and then in towels or newspaper will help keep it hot. If you have some styrofoam around the house, you could put some on the bottom of the casserole and some on the top after the foil wrapping. One of the caterers here in town uses "hot boxes" with styrofoam lined cardboard boxes to hold foil casseroles for an hour after they are packed. A styrofoam cooler would probably work well too.

Here is another family favorite casserole:

Hamburger Cheese Noodle Bake

Serves/Makes: 8
Ingredients:
1 1/2 pound ground beef
1 can (10 ounce size) tomatoes
1 can (8 ounce size) tomato sauce
3 ounces cream cheese
1 cup sour cream
1 cup grated sharp cheese
8 ounces flat egg noodles
6 green onions
salt and pepper
garlic

Directions:
Brown meat and drain. Add salt, pepper and garlic to taste. Add tomato sauce and tomatoes, and simmer 20 minutes.

Boil noodles, then drain. Mix cream cheese, sour cream and onions together with the cooked noodles. Mix well.

Layer the meat mixture, noodles and grated cheddar cheese in a baking dish, ending with cheese. Bake 25-30 minutes at 400 degrees F.
