Need help

I just roasted potatoes and they are perfect. I am trying to get dinner ready but leaving at 4:00 home by 6:00. Can I just leave them in the oven and turn it back on to warm them? I don't want to cover/refrigerate unless you think I should.

I would cover them to prevent them from drying out, but you do not need to refrigerate them. I parboil potatoes before roasting them so that roasting happens very quickly.

I'd leave them in the oven....but wrap in foil....then remove the foil and re warm. Frankly they won't cool off very much...
