Not enough ham! What else?

I ordered a ham about a week back for Easter. Usually we've had smaller crowds so 1 - 7 lb ham has been more than enough. Everyone has also liked ham. This year I have 13-18 people coming so far for Easter. I think the 7 lb ham should feed around 14 people. So what else should I make? I'm fairly sure at least one person does not eat any pork, beef or lamb (any red meat), but does eat poultry & fish. Another person is gluten free. What else should I make that is a main dish, but won't be daunting?

Well you can't go wrong roasting a large chicken or capon! Just stuff it with a lemon to keep it simple! Whatever is left can be given away to your guests or you can freeze it!

It would depend on what your oven situation would be. If it will be in use for the ham, casseroles, etc., then you could poach a side of salmon the day before to serve cold with dill and mustard sauces.

If you have an electric roasting pan, I'd use it for the ham and go with ghoghunter's capon suggestion.

To answer your question about the seeds, the answer is Yes! If I have pods that a tad too fibrous, they will not become soft in canning (or least as not as soft as you want). I can usually lightly cut 1 seed in half to see how hard they are, or pop one in my mouth. You just have to catch them in the window where the pods are too fibrous to eat but the seeds are not. I always add extra seeds to pressure canned okra as I like to eat the seeds all by themselves if that is what is left in the bottom of the jar. I pickle both sweetened and unsweetened okra, and pressure can okra and tomatoes to eat when the season is over. Hi everyone, I just joined in as a new member here. I was welcomed by Annie (see Her Easter Thread) Adding to this post, you can make a Mess of Greens flavoring the water with your ham stock instead of using ham hocks or smoked turkey. Collards, cabbage, kale, and turnip greens taste great with ham stock in it. I usually freeze mine flat in pint size ziploc bags with bits of ham in it. I also use some in the combination of water, rice ratio for jambalaya for an additional flavor booster. Okay, I'm jumping right in like Annie said. lol. Hope to meet you all.

Bogue's Restaurant, here, bakes and sells this ham for Thanksgiving, Christmas, Easter. You to get your name on the list, ahead of time, cause they sell out. People go gaga over this ham. Dr Pepper Ham 1 6/8 lb fully cooked ham (either shank or butt portion) 1 can of Dr. Pepper Wrap ham in heavy duty foil, leaving top open to pour in Dr. Pepper. Place in a large enough pot to hold the ham. Pour in Dr. Pepper & close foil tightly around the ham. (You don't want the Dr. Pepper to leak out of the foil if possible.) Cook in preheated 250 degree oven for 6 to 8 hrs. (Put it in the oven in early morning & forget about it til dinner.) .

The proliferation of TV channels would make producing income for each by its marketing dept. tough enough, were they splitting the same total amount of advertising pie - but it's tougher than that. The amount of the total advertising budgets allocated to TV is shrinking, as many agencies and companies are allocating a substantial portion of the total budget to internet exposure, plus other media. With the anticipated economic slowdown, resulting almost always in a shrinkage of advertising budgets, each of the various carriers will be getting even less ... ... so there'll be more strident advertisig in future, I think. More prolific, too: if they get less pay for each ad ... there'll be more ads. Watch for attempts on the part of the TV guys to have limits on permitted advertising minutes per hour to be ... expanded. Do you want that? Which agency regulates TV advertising limits ... is it the F.C.C.? In Canada it's the CRTC. It might be a good idea to contact them, complaining about the number of ads on TV - and the amount of time that is given to them. Good wishes for enjoying your TV experience ... I seldom watch it ... and we have a similar situation in Canada to NPR. Which doesn't wheedle for support ... can you believe that? CBC-TV carries advertising: CBC Radio does not. I'm so amazed to be in this situation! Usually the DH & I have (as he puts it) "enough ham to swing on" for days. I usually wind up freezing some of it. I think I'll go with a chicken or capon, just because I'm more familiar with cooking them. I have a Nuwave / Flavorwave oven (essentially a small portable oven). So I think that would be perfect. My experience in cooking salmon is very limited. I've only grilled salmon steaks before and that was a long time ago! I'd hate to botch it at Easter.

I like the idea of a quiche too. The quiche I could make ahead and just bring instead of having to tote a chicken & an oven. I did wind up ordering another ham. There will be enough ham to swing on now!

Kielbasa is great with ham, but it sounds like you want a fish or chicken... In that case, I would probably make gf lemon-pepper chicken using tenders, if available, or breasts pounded thin otherwise. It just sounds good to me right now, especially with a little ham. lol!

I don't think I've ever seen anyone ever complain about not having enough ham.

This must be a first.

Well, too late, but I would have a salmon fillet to go with the ham. And I'd make it even if I had enough ham, for that one...
But I usually lean towards way too much food than just right.

Boo, I'm late to the party, as usual, and I see you've alredy ordered another ham. That's OK, you can put leftovers in another quiche, LOL.

I was also going to suggest quiche, but if one person is gluten free, they couldn't have the crust. Unless you made that quiche with the hash brown crust.....

So, I'd probably go with chicken too. It's something that a lot of people like, so it's pretty safe.
