converting bread machine recipes to manual

I am not a bread maker, but it looks like I'm going to be. DH has just been put on a low sodium diet (2g/day...which isn't as low as some I've read about). I am now in the midst of reading other posts and blogs about low sodium cooking. Often I find interesting recipes for bread but they bread-machine recipes. I do not have a bread machine. We do not eat much bread now (maybe a loaf a week), so I see no need to buy one.

I have found a recipe on Dick Logue's website for low sodium bread that I would like to try (see below). It calls for using a bread machine. Could some of you who are bakers please tell me what I need to do to convert the recipe to hand made?

Also, I would appreciate any general guidelines for making bread manually when the recipe is for a bread machine.
