I like the mashed potatoes, for flavor and texture contrast and because they're substantial--in Zone 7 and February I assume your weather isn't balmy. How about roasted broccoli (broccoli, salt, olive oil, and a spoonful of water) for color and another flavor-texture contrast? And if you know a good and simple side with carrots that would be good, again for color and variety. For a salad, Boston lettuce with frozen peas (this is the only frozen vegetable I use, and is very popular in our house, especially in winter) and perhaps sweet red pepper, with lemon vinaigrette; or the salad of mixed greens mentioned above. Comments (3)What about a nice frittata? Typically a way I get rid of leftovers but reheats very well and can be cut into nice squares or wedges for ease of serving. Cooked spaghetti, bound with in a egg custard base, flecked with color from roasted red peppers, some spinach and herbs. Another thing I like to serve, because it is easy to pick up is stromboli, bread dough into which has been rolled your choice of cheese veggies and meat. My kids even take this in their lunch box, a favorite is pepperoni, spinach, red pepper, and provolone. Comments (7)Broccoli/Noodles INGREDIENTS 6 cups uncooked wide noodles 3 cloves garlic, minced 1/4 cup olive oil 4 cups broccoli florets 1/2 pound fresh mushrooms, thinly sliced 1/2 teaspoon dried thyme 1/4 teaspoon pepper 1 teaspoon salt DIRECTIONS Cook noodles according to package directions. Meanwhile, in skillet, saute minced garlic in oil until tender. Add broccoli; saute for 4 minutes or until crisp-tender. Add the mushrooms, thyme, pepper and salt; saute for 2-3 minutes. Drain the noodles and add to the broccoli mixture. Stir gently over low heat until heated through. I would also serve, Marninated Chicken Breast with flavor close to the Shrimp for those who can't eat Shrimp. A nice Greek Salad would be awesome with either Entree. Comments (103)Happy to hear your lunch was a hit. It sounds delicious. My grandmother used to make apricot squares and used a scallop edged tool for the lattice...so pretty. My aunt gifted me a scallop edge cutter, but I have never been successful with the dough and it always ends up undercooked on the bottom, but then again I’m not much of a baker. Speaking of which....I did try your bread. I found it did not come together with the 1 1/2 cups hot water, I needed to add more. Also, I cooked it in a Calphalon pot since I don’t have a dutch oven. Well, it was a total bust. Took an hour to get it browned on the outside and it never cooked on the inside. I realize now I did not let the oven preheat long enough snd maybe it’s the pot? Maybe my flour was old? I followed all instructions to the letter. I am going to try it again with fresh flour, but you don’t find you need to add more water?
